Jelly! I love your music-making streams! At 1:57:12 you talk about modulation. Modulation is when you change from one key center to another. You can use a V-I cadence to make it more obvious there is a new key center. In jazz and by extension in J-pop, the II-V-I progression gets used most often to modulate to new key centers. For example, say your current key center is C and you want to modulate to E. You can play F#m - B7 - E, which are the II minor chord and V7 (dominant 7th) in E respectively. I hope this helps!
