Baji, I some times add 1/2 cup milk at the end. This makes palak more creamy. Add milk and cook uncovered 5-6 mins. Plz try it, you will like it. Also it improves the COLOR of the dish. After you add palak, roast it few minutes and do not cover it too long. The longer you cover palak, the darker it gets. Seemi from Virginia, US
