原料
12个鸡蛋
高酒量米酒
盐水溶液
1000毫升水
250克粗盐
1 肉桂
2 八角
*方法按视频
*密封玻璃罐后,将罐子存放在家中阴暗干燥的地方。
Ingredients

Some rice wine (high alcohol %)
Brine solution
1000ml water
250g coarse salt
1 cinnamon
2 star anise

*after sealed the glass jar, store the jar at dark and dry place in your house.

Do you keep eggs in fridge after it’s ready ?
you can either store in the brine solution or wipe fry and keep in fridge.. suggest not to do too many at once… 🥰🙏🏻
I tried this recipe but hor.. got some white thing coming out from egg to the brine water.. i think got crack egg.. means this whole jar cannot use le?

可以根据瓶大小减份量。

Every time I buy salted duck egg from the store they have a gritty texture. Is that just a characteristic of all salted eggs no matter how they are prepared? I really enjoy the flavor but my western palate just isn’t used to the sandy mouthfeel. I can feel the carton of salted duck eggs staring longingly at me every time I open the fridge door. I don’t want to give up on them.
After seal the eggs in the glass jar, where do we store the jar? In the fridge or just leave it outside room temp? And also if we want to make less, like 6 eggs only, do measurement of all the other ingredients still the same?
you may store the jar at dark and dry place in your house, no need to store in the fridge. If you’re making 6 eggs, can reduce the measurements to half according to size of your glass jar, make sure the solution is enough to cover the eggs… 🥰🙏🏻

我腌过鸡蛋多次,所有的方法都试了,基本是不会出油更不会起沙,绝对不可能和视频上显示的那样,蛋白会很咸,蛋黄才会结的比较圆硬一些,但没有油。大家可试一下,如果有她那样的油,请告示大家。谢谢🙏
请教老师,我腌了14天的鸡蛋蛋白就很咸了,而蛋黄没有油也没起砂,与你视频中左侧的那个蛋黄样子,如果放24天,那个蛋白就废了?
这有可能用的盐咸度不一样。当盐水凉后,如果有不溶解的盐,不要把剩下盐倒进腌制瓶里。如果也一起倒进去,咸蛋白就会变很咸了 🙏🏻
