Our Jerusalem artichokes are done now, and we're packing them away until they can be planted in new places come spring. Although one can leave this staple starch in-ground until time to cook and eat, they can be stored out of ground with a little preparation. here's how:

We grew our first Jerusalem artichoke this summer and have heard it's very difficult to dig up all of the tuber in order to remove them from an area. We started fermenting some of them yesterday as we've read that reduces their fartichoke tendency.
