      authentic ! - like any street food vendor vs. restaurants (with a fake commercialized version of the real thing, that is cheaply sold, out on the streets); a grandmother/nana/lola/grandma's, aunt's, or mother/mom's (secret) family recipe

    Rex, you are genius! The history of Fil food - "Pretty much determined by who every invaded us over the years." "First mixed plate by military force." Take from the invaders and make it your own style! kare kare - curry, eggroll w/o veggies - lumpia shanghai, etc.
