Thank you for showing us this very big part of your life! You must have worked very hard to have made all of this dough every two or three days. It's quite amazing how much you're able to produce by yourself. Sometimes it takes me longer just to bake one thing in my little kitchen. I'm sorry you're losing your restaurant! I hope you can still find a way to keep making things for us!
Reminds me of the pizza we did at my job. For some reason the prep cooks wouldn't cut the dough (we did balls) until a few minutes before dinner rush on a Friday so I was stuck getting weeded up with tickets and the dough is tenser than DarkSydePhil around tax season. I'm gonna fucking miss the kitchen videos.

Older video I didn't get to edit until recently. out of about 6 dough makers I've seen throughout years 5 of them would go take a smoke break. Usually the dough would be done by the time they came back, it was just their habit.
Salt kills yeast not sugar.
You're correct I dyslexia'd it and forgot to add text, sugar feeds yeast while too much can kill it, salt kills it though.
sugar also kills yeast in high concentrations, sucks the water right out of the cell walls
So many memories working with real pizza. Most fun ive had was balling dough at 8am stoned just laughing with friends. Good times.
