    I guess that the vinegar is the secret ingredients because I bake home bread for more than 15 years.
    The recipe is good. The dough is handled with care and is a good tutorial.
    The only thing I don't like is when some essential things are NOT revealed: she did not mention that 300ml liquid to 500 grams flour makes a very sticky dough and need to have your hands dipped in oil to be able to handle it. Also, she had her hands oily when kneeded the dough after rising. These are essential things to share, otherwise people, in good faith are willing to try and give up because they cannot make a dough as in the video.
    People, dip your hands in oil ( or melted butter if you want) and knead UNTILL the dough yelds to your caring hands! Enjoy making bread!

      Уксус не дает сильно крошится хлебу...Отношение воды к муке-1,48.... например=300мл* 1,48=444 гр муки... И еще-чем больше вы месите тесто- то тем вкуснее будет хлеб...народный опыт

      vinegar i only use in my pizza dough it makes it bind better .we make 25 loaf batches at home sell eggs and give bread away often . This morning im making focaccias bread very sticky dough .. black olive onion topping no vinegar ,i watch these videos everyone has different ways and i like to steal whats easier or a improvement .vinegar an milk you make a butter milk substitute also very quickly for recipes .

    Yeast prefers a sour (acidic) environment, one of the reasons sourdough works so well is some of the sugars is converted into lactic acid.

      Well dont say there's a secret ingredient that makes the bread better than in the stores, and then don't point out what the secret ingredient is. And dont hide or be too lazy to point out important details like oiling your hands before handling the dough.

      I have been baking bread all my life. My time in my kitchen is my Zen space! I love how she shows her process, with that beautiful loaf as a result. I use Apple cider vinegar too, when I am not baking my sourdough.

      It works……some recipes call for a tiny bit of baking soda with the vinegar. Soda needs an acid to activate. Make the bread rise so much better. Even just 1/4 tsp will do it.

    The "secret" ingredient is the vinegar

    Preservation
    Vinegar can act as a natural preservative to extend the shelf life of bread. The acidic environment created by vinegar inhibits the growth of mold and bacteria.
    Leavening
    When used with baking powder, vinegar can act as a leavening agent to produce carbon dioxide bubbles that cause baked goods to rise.
    Browning
    Vinegar can enhance the browning of baked goods.
    Tenderness in pie dough
    A bit of vinegar can make pie dough more tender by hindering gluten development.

    Maybe just putting a plate or clean cloth over the bowl while waiting for the dough to rise? Less plastic waste. Less pollution. The bread looks delicious!

    Мне трудно поверить, что при таком соотношении - 400 мл воды : 500 грамм муки - получается тесто такой консистенции. Это скорее получится жидкое, липкое тесто, как для чиабатты (😢)

    Do we leave the water in the middle when you placed in oven ,the water used to brush on the bread.when you took it out the water wasn’t on the backing sheet.Looks absolutely scrumptious.

    Adding acids in the dough makes a shop like loaf of bread. An acid is an enhancer for the dough, and supermarkets use citric acid for this, but it kills the concept of natural bread completely. And sugar is an enhancer too. The original and natural bread has only 4 ingredients: flour, water, salt and yeast.

      Citric acid is found in citrus fruits and is just as natural as acetic acid found in vinegar, or lactic acid from sourdough.

      @martinwyke original bread never had a citric acid or any acids. Only 4 ingredients: flour, water, salt and yeast.

      why is it bad to add ingredients to the basic 4 if it improves the quality of the end product? unless you apply that theory to everything in life and go back to living in caves and making fire with a bow drill, then there is no reason to criticize newer methods just on the reasoning that they are not the original. otherwise, you are hypocritical

      @Scott-ji2tu because the name of the video suggests you make your bread without enhancers. The bread can be better than in store, if you use the best 4 ingredients (especially flour and yeast), if you use enhancers, it will be same like in the store, they use additives to compensate the quality of flour. It's no problem to use extra ingredients, but then it will be the store like bread.

      Would also like to know.😊 Guessing that universal would be AP flour, we only have cake flour here. And, wheat flour, could be bread flour??

      ​@@kathydean6491Weizenmehl, wie hier, scheint 405er zu sein, für feine Kuchen, für Tortenböden, für alles andere brauchbar.
      Ich nehme dafür 550er Weizenmehl , macht bessere Teige und ist griffiger.
      Dann gibt es noch 1050er, für Brote, für festere Gebäcke.
      Und dann noch Weizenvollkornmehl.
      Das alles scheint allerdings nur in Deutschland verbreitet zu sein. Hier essen wir sehr viel mehr gesunde Vollkornbrote, häufig mit hohem Roggenanteil bis zu 100%.
      Reines Weizenweissbrot ist eher selten als normales Frühstück oder Abendessen , vielleicht als Brötchen, dann aber auch oft mit Körnern und Roggenanteil.
      Ist auch gut so.
      Kräftige Brote sind einfach leckerer.

      The best bread flour, if you can find it, is Baker's flour, or 5 Roses flour, unbleached. We buy it in 44lb bag. We usually get it from european, mostly Polish stores.

      I think it's simply all purpose flour, rather than bread flour. Both are wheat flours.

      Yes use a dough hook on your mixer. Regular flour will work as well

    Because shop bought bread has got lots of e numbers in it to give it a long shelf life, prevent mould and so on...
