I guess that the vinegar is the secret ingredients because I bake home bread for more than 15 years. The recipe is good. The dough is handled with care and is a good tutorial. The only thing I don't like is when some essential things are NOT revealed: she did not mention that 300ml liquid to 500 grams flour makes a very sticky dough and need to have your hands dipped in oil to be able to handle it. Also, she had her hands oily when kneeded the dough after rising. These are essential things to share, otherwise people, in good faith are willing to try and give up because they cannot make a dough as in the video. People, dip your hands in oil ( or melted butter if you want) and knead UNTILL the dough yelds to your caring hands! Enjoy making bread!

It works……some recipes call for a tiny bit of baking soda with the vinegar. Soda needs an acid to activate. Make the bread rise so much better. Even just 1/4 tsp will do it.

Add some seeds such as sesame, pumpkin and sunflower seeds. They further enhance the nutrients, texture, flavour and fragrance of these buns, making them even more delicious!

Adding acids in the dough makes a shop like loaf of bread. An acid is an enhancer for the dough, and supermarkets use citric acid for this, but it kills the concept of natural bread completely. And sugar is an enhancer too. The original and natural bread has only 4 ingredients: flour, water, salt and yeast.
why is it bad to add ingredients to the basic 4 if it improves the quality of the end product? unless you apply that theory to everything in life and go back to living in caves and making fire with a bow drill, then there is no reason to criticize newer methods just on the reasoning that they are not the original. otherwise, you are hypocritical

Hier essen wir sehr viel mehr gesunde Vollkornbrote, häufig mit hohem Roggenanteil bis zu 100%. Reines Weizenweissbrot ist eher selten als normales Frühstück oder Abendessen , vielleicht als Brötchen, dann aber auch oft mit Körnern und Roggenanteil. Ist auch gut so. Kräftige Brote sind einfach leckerer.
The best bread flour, if you can find it, is Baker's flour, or 5 Roses flour, unbleached. We buy it in 44lb bag. We usually get it from european, mostly Polish stores.

Yeast prefers a sour (acidic) environment, one of the reasons sourdough works so well is some of the sugars is converted into lactic acid.
So that is the advantage of the cider vinegar? (Is that the "secret" ingredient?)

Citric acid is found in citrus fruits and is just as natural as acetic acid found in vinegar, or lactic acid from sourdough.

Yes use a dough hook on your mixer. Regular flour will work as well
