you can also just make a bunch of rice and save it/freeze it. cooked rice lasts way longer than most ppl think, "day" old can really be like almost a week or longer if kept right.
Do not use fresh rice for fried rice, it is now where nearly as good.

I think it maybe because babish does a variety of dishes like icecream, cookies, and tons of different stuff where sam is more savoury. Love both. Best this about youtube is discovering great cooks/chefs
Thats a really good point. Babish has simple and expert level recipes in each show. I wouldn't be cooking if it wasn't for UA-cam. I love Josh Weisman when it comes to sweets and desserts. But his stuff is heavy lol.

as a korean, i highly recommend using gochujang in this recipe. might not be accessible to people that don't live near an asian market but you can always order it online.

The kimchi is what really puts it over the top. Kimchi fried rice is frickin amazing. It gives any rice dish just the right amount of kick.
Folks truly underestimate kimchi. It's such a versatile ingredient. Everyone's always like "I don't really like stir fry". Bruh... you can use that shit in hundreds of dishes

Got a midnight keto mostly recipe. Just made it up tonight. I don’t smoke 4:20, But this would be good for next year.
Throw 2tbs of Kerry gold in a hot skillet. Pop a can of chicken breast (Kirkland). Get it good and hot. Crack open 4 eggs around in the pan.
Next spices. I used old bay with pepper and or red pepper. Then add some cheese. Generously.
Stir cooking the eggs to perfection, not over cooked.
Dump on a plate. Spritz lavishly with chipotle Tabasco.
Takes like 10 minutes.
Great. You can add some keto toast or any bread non keto.
Enjoy.

Like the recipe, Sam.. maybe because I like Kimchi. I'm a-thinkin', mix in an egg white into the fried rice (while still hot)... then shaping the volcano (lie the inside of the mold with aluminum foil, allowing the residual heat to completely cook the egg white)... then, using a smaller diameter pan after the volcano has set, make the island. Yes, a runny, poached (in red food coloring,) egg yolk placed in the volcano crater before "cheese-ing" it might make the "lava" more runny.
(Still 4 eggs: 1 egg white into the rice/1 egg yolk into the crater, 2 eggs beaten for the "pan-fried island.")

I've been watching for a bit, good stuff guys! Cooking with character! My diet doesn't allow for most of what you make but that doesn't stop me from using some of the techniques presented.
Some tips on keeping the rice in its shape: pack it a little tighter in the mold and also don't let it cool off before putting it in the mold. It needs to be warm and then leave it in the mold until it cools off.
Hey Sam, was that thickened soy sauce you used just a thickened soy sauce or is that the Manis Kecap variety that is sweetened with palm sugar ? I like to make an Indonesian styled fried rice that has a sauce based on using curry powder bloomed with fried onions in neutral oil ( reserving about half of them after softening/browning and pureed to make a thickened sauce ) to coat other ingredients. I'll also add curry powder to oil before frying some scrambled eggs. The rest of dish is bean sprouts, chicken, shrimp, water chestnuts, shredded carrot maybe snow peas if in season or frozen baby green peas tosssed in at last minute with some chopped green scallions.

Next time... take a 1/4 of the egg mixture and mix with the rice before putting it in the forming cup!!! If course the rice needs to be cool... and then finish like you did... and then some egg will be a mixed into the rice and help it hold its shape and it will taste and look more magical!!

Kimchi is a Korean version of pickled veggies(mostly spicy and red but there are non spicy white and watery alternatives), and along with rice, is a staple to Koreans.

I’d have done this… at the bottom of the cup, a little bit of cheese, then put in the rice and then stick a long stick of cheese in the middle of the rice… put in a warm oven to allow the cheese to melt in the middle of the rice. Put eggs in the medium heated pan and just before they’re cooked, place the volcano down in the pan and then stick back in the oven to allow to finish cooking egg for another few minutes. Bring it out and you’ll have a proper cheese volcano.
That's a pro move with the microwavable rice!! I've done it before when in a pince.

nice recipe, side note you just need to peel ginger you don't need to cut it, it breaks apart when cooked (just learned this myself working in a Japanese restaurant).

Quick tip, you can use the edge of a spoon to peel ginger. Just as fast as using a knife and you don't waste any ginger. Also I find it funny how he said he should've used a bigger pan, when he could literally dump the pan out into the flat top! ;)
