    Banana Pudding Recipe:
    8x8 Pan
    3 Egg yolks
    2 cups of Milk
    3 Tbsp Cornstarch
    1/4 tsp Salt
    3/4 cup Granulated Sugar
    1 tsp Vanilla Extract
    1 box of Vanilla Wafers
    Meringue:
    3 Egg whites
    1/4 tsp Cream of Tartar
    8 Tbsp Granulated sugar
    The first thing we will do is make our vanilla pudding, Do this by putting your milk in a saucepan and heating it until little bubbles form around the edges. While you are waiting for your milk to heat up mix together your egg yolks, cornstarch, salt and granulated sugar until the mixture becomes pale in color and slightly fluffly. When your milk starts bubbling around the edges, add half of your milk to the egg mixture and immediately whisk together so the eggs don't become scrambled and cooked. Once your mixture is completely mixed with the milk, add it back to the pan, continue to whisk together the ingredients in your pan over medium heat until it becomes thick and pudding like. Once your mixture has thickened add it to a bowl and put plastic wrap directly on top of the pudding, this prevents a skin from forming. Then place it in your refrigerator until cold and thick.
    While your pudding is getting cold, get out a bowl or a bowl from your stand mixer. Make sure your bowl is completely free of oils. Using a paper towel or a little vinegar will help get any residue out of the bowl. The oils in your bowl are what can cause your meringue to not peak.
    To your bowl add your egg whites and mix with a whisk beater until frothy. Once your egg whites have gotten frothy add your cream of tartar and slowly add your granulated sugar a tablespoon at a time. Once all your sugar has been added, beat your meringue on high until stiff peaks form.
    Slice your bananas into coin slices.
    Now its time to assemble! lay 1 layer of vanilla wafers on the bottom of your 8x8 dish. lay 1 layer of your banana coins on top of the wafers then add half the pudding on top, smoothing out to the edges. Repeat the process with your next layer then add your meringue on top. This is my favorite part because i love to make peaks! Place your banana pudding in the oven at 350°F just until the meringue gets browned to your liking.
    Let sit to cool for about an hour and serve. Best served cold.
