i know a way to fill pools
cover the top of the pool with any block (normally dirt or stone, but as i said u can use whatever u want)
break 2 layers of the blocks, put a line of water in the corner and against the cover
then do the same exept break 1 layer instead of 2
once u get to the end and break the last part of the layer u can use the side of the pool to fill the last part

There is also a much faster way to fill a pool with water.
Especially since you can stack 64 blocks of ice, while water can only be stored in a single bucket per item slot.
• If you destroy an ice block, it turns into water.
• Place blocks of ice diagonally on the ground. That halves this part of the effort.
• Depending on how deep you want the pool to be at the end, continue to stack each depth layer of the pool with blocks of ice to the top.
• Now grab a pickaxe and smash the blocks of ice like crazy! Yeah!
