This culinary program teaches wonderful information, some advanced, some basic. And no matter how expensive your shoes and pants are, when the dishwasher calls in sick, any person, in ANY position, ANY salary, and all ego aside, even restaurant owners still have to put their time in the tank. If you're a prep cook that says, "I don't do dishes", you'll be looking for a job soon.
Ive been a dishwasher 20 years for several major chains. I created 3 rules entitled "S.O.P" Speed Organize Prioritize. Also NOTHING goes into dishwasher UNLESS ITS ENTIRELY SPRAYED CLEAN. The machine is NOT dishwasher, its a SANITIZER.
@@darelltolciI have worked as a dishwasher many years ago wear a good pair of shoes !!!! Buy a good pair of waterproof shoes maybe timberlands I can’t stress buy wind pants or track pants you will not get wet or any rash
Slip resistant shoes are a must. When you are in the weeds start a big item that is easy to handle...big trays, containers, or mixing bowls. Keep those moving through while you organize ev that is dirtier. It's kind of a balance. You want trays full and consistently moving through the conveyor but you also want to take time to organize dishes like with like if you can (as much as possible) so they are easier to unload. There are "spacer" loads you can send through with something super easy like a big bowl and a couple trays and while that is working you can assemble a more involved tray, such as things that are small, need to be arranged more carefully or things that need to be scrubbed. Go back and forth...easy hard easy hard....to buy yourself some time while still working down the pile. Save tongs and spats etc. and silverware, let it soak and pile up until you are more caught up. Glasses usually the bussers load the tray and when you get a full one send it through.
Dishwashing can be a profession if you know where to look. Many dish jobs suck as they pay minimum wage and no overtime. But my place pays $15/hour with tips and chance to work overtime. My dish partner works 2 dish jobs: one pays 20 an hour. If you do get paid minimum wage, leave. The work is worth more than that
The rule of putting away clean dish dishes damp is not okay. Where I work I have to make sure that all of the dishes are completely dry before putting away otherwise the city health inspector is on our ass
Procedural disagreement here. Theoretically the sanitizer rinse ought to prevent bacterial growth on the wet dishes. Hand drying sort of defeats the purpose. And yet wet utensils placed in a drawer would seem to provide an ideal situation for bacteria to eventually grow. Determining the ideal technique would consist of simple experimentation; take a swab stick like they do in medical institutions, swab the surface, and culture the swan. Or else consult the literature that (one assumes) is already extant.
@thecolorblack4778 why is my entire city dumb when it is company and health inspection policy for the company I worked for to put dishes away dried? I think your comment is dumb and dumber!
Most dishwashers have a drying agent simply waiting a couple minutes works wonder in the waiting just fill a couple more racks then come back to ur dry dishes and put them away
Food handlers card test says you can't put towels on cleaned dishes they must be air dryed .... Because towels are not sanitized properly these days and are spreading toilet debris on clean dishes

Dear Friends ,I have read it and watch it in carefully, but I wanted to know how to proceed, could you please tell me in details through m email,I am interest with Dish washer.Thank you God Bless you!
In a real fast-paced restaurant scenario you would spray your hands with water and get the clean dishes out, that is a fact nobody is rushing out to wash their hands imagine the time you would lose.
This is one example of many why workers do not get paid for the value they create. This kind of hustle is by far greater than any effort both physical and mental , of any CEO and executives, who get paid so obscenely, which is about 281 times more than this hard worker..not right at all and needs to change..
R Colon 3. ways that can happen Unionize pros people strike to get higher wages, cons unions attract mobsters and other shady folk. Petition the state, pros wage increase by law, cons employers will look for alternatives to dish washers or employee fewer dish washers Bonus: reducing the workforce through immigration and foreign policy 8 dollars an hour is a pretty penny to someone who made 4 dollars an hour in the Old country, not to mention a different competitive strategy and life style culture
This is why people don't make big money in the restaurant business. Wash dishes when hired, show your skills when asked if you can prep, impress even more when someone on the line calls in sick, and write your own ticket. The President of Morton's Steakhouse, who I had the honour to work with for many years, started in the dish room. And he had a nice Ferrari he drove me back to the hotel in many years later. Wages are important, but work ethic, loyalty, and dedication get you past the magical $25 an hour and can show you how much money can be made in a real, professional, and successful restaurant that cares about it's people.
It's getting bad out there that's for sure ... People are just dunking food covered dishes I. The soap water then the rinse water then the bleach water and then sticking it back on the shelf full of water and stuck in food and health departments are passing them with flying colors . It's bad
Never put dishes like that face down you're wasting time checking to see if it's clean or not and never put kitchen utensils one by one. again you're wasting time !!

What's causing the water to roil in the "main sink"?
Water jets. They help knock off food that's stuck to dishes.

Why shouldn't we dry dishes by hand please?
Spreads bacteria. Those sanitizers get the dishes so hot that they air dry in less than a minute.
