    Yesterday I downloaded the Fast Track app, and I was curious what the score would be for fermented vegetables. Well, I saw that sauerkraut got a very good score, so that was a good sign... then... I noticed this video. Bravo! I've been fermenting gherkins for years, absolutely adore them. I don't care much for dill, so I use caraway seed instead as a flavoring, along with a few other spices. For tannin, a green tea such as Chinese gunpowder, also works really well, as do oak leaves as well.
