I Never thought about not having the gift of sight to aide in cooking. I think the most important things are smell, texture and taste though. Salmon patties are perfect for that. Hell….ya might even be a BETTER cook than before!

my grandmother told me of her great grandmother who couldnt see at all and grew a garden and cooked everything in it . Then when my granny got old she also went blind from macular degeneration and she still cooked very good withought sight.

If you are a Christian you have the authority over sickness . Start laying hands on your eyes and command healing in the name of. Jesus. Find healing verses and recite them daily. Also start taking daily communion. God's word works work it. 🙏

I had a very similar childhood as you. I watched Sanford and Son with my daddy everyday and I still watch it from time to time.I am so happy that I grew up with no cell phones we played outside in the dirt and mud and swam in creeks and rivers no swimming pools. I miss those day's. When I was growing up you had to eat what was cooked for dinner or you went hungry. I love fish cakes we ate them quite often and still do. I love the recipes that you make. A lot of them remind me of times with my family growing up. Things that my Daddy and granny use to cook. God Bless you and your family.

Every now and then I watch one of your videos, salmon patties bring back memories.
Still love them today, mommas going on 92 and cooks every now and then.
I think I like hearing your stories more than watching your cooking videos.
But if I was the camera person my stomach would be happy.

The only reason I eat salmon patties is to get the health benefits found in the skin and bones (fall apart and mix well in making receipe - with a finicky person married into family if eating with me, I eat my skin and bones mixed in a little bowl as they come separately).

Grew up eating salmon patties (made differently) and they were always served with scrambled eggs, peas and white rice. I have no idea why but it’s delicious in that combo. Maybe it’s a NC thing because I know other people locally that eat it that way too. Thanks for sharing! Always love hearing the history of dishes sprinkled in faith. I enjoyed your "Hillbilly Kitchen" cooking. I grew up getting to have salmon, too. We ate plenty of fresh fish because everyone that I know of fished & we kept some in the freezer for the extra cold months in the OHIO River area. Mother made some with onions but I still prefer them without. I Just want to taste that SALMON. Now that I'm in my 60's I still make them with an egg & you're right about the "filler"❗You can use crackers, Planko bread crumbs, flour with some corn meal mixed with it, just about anything for the binder. We usually fry in a light vegetable oil with a little bacon grease❗It really adds the flavor & not need more salt. Things I like to serve as my side dishes can be fried potatoes, my homemade baked beans, hominy, macaroni & cheese that's homemade, corn on the cob, fried or steamed squash & maybe a bowl with sliced cucumbers with onions broken in circles in vinegar & splash of water with a dash of pepper. These are just some suggestions to choose from for YOUR FAMILY. I don't suggest you feed your pup or kitty from the table, but a little salmon for EACH OF THEM helps to keep their intestines clear of bacteria. So share a little bite if you anticipate having more than you'll need. Maybe each a bite b4 you mix it. It's an old Indian trick but it does help❗Thanks to my half Indian Paternal Grandmother, we've learned so much from her for US, OUR PETS & even BABY'S illnesses❤❤❤.

Grew up in Texas, poor and country, but we survived on salmon patties. Fried bologna, white flour gravy, white bread or cornbread and green beans, corn, potatoes from the community garden. Sometimes a fried chicken, rabbit or squirrel. And eggs of course with sometimes milk from the dairy down the road. We were rich and didn’t know it. Nothing artificial.

@Lil' Black Duk Grammar and spelling corrections on your post. ".....our grammar and spelling WERE incorrect" (plus a period goes inside the quotes, not outside). And note that grammar and spelling are not proper nouns, they are common nouns and are not capitalized. The same thing is true of cursive, mother (depending on how it is used), farmer's daughters, and home economics. None of these are proper nouns, although in this day and age it has almost become like the word "ain't." These usages have been misused so much that people just assume they're correct and, therefore, society has accepted the incorrect usage (whether it be capitalization, incorrect grammar, etc.) and it has now become standard usage.

Now Mom kept the bones and skin in the salmon and they were good the bones were actually tender after cooking. My parents were the finicky eaters I would eat just about anything, still do today. I love trying new and different ethnic foods. I know Mom served them with cornbread but I can't remember what side dish, probably mashed tatters.
