I made a stew akin to this once and it was surprisingly one of the heartiest best dishes I've made. The only differences were fish and shrimp instead of all the seafood, homemade shrimp stock instead of fish stock, Chinese cooking wine instead of white wine, and my spices were just oregano, thyme, salt, pepper. Ate it with some buttered crusty bread. So good.
I'm not at all italian, im a fisherman from Oregon. Over the years I've come to prefer Cioppino to any other seafood soup/stew. The tomato base allows you to add pretty much any seafood you want, you'll get the flavor of the seafood but the soup remains its own taste mostly. Don't worry about recipes. Cioppino is whatever seafood you have available. It's my "go to" and what I eat more than anything.

Anyone else been pronouncing it "chup-peeno"? Grew up in a heavily Portuguese and Italian area and they had always pronounced it like that. Used to have chiopino feeds down at the reck hall every year where we would get drunk on white wine and seafood. Good times.
This looks amazing. I didn't read the comments but I am in the Bay and I have had some amazing cioppiono. Mine was from Tadich Grill in SF. If I were looking for an authoritative list of seafood ingredients I'd start with theirs.

But a mountain of fries, and it would be great for us if you showed how to make them right as well, a brioche bun bottom (more power down there) and a good hamburger steak would probably blow some minds.
