I think the reason why they mainly remix hei's tekken 2 theme is bcs in tekken 2, hei rise again after defeat to stop kazuya, and as you can see in tekken 8, he will do the same again
Plus Tekken 2 songs have more stable melodies that you can sample. Tekken 3 has good songs in the context of the T3 soundtrack and ambience, but they aren't very clear. Jin's was one of the most unique ones so it got an easy remix in both T5 and T8.
At first I honestly didn't hear the remix of the tekken 3 theme. Then I realized it's a pseudo mixture of his arcade version and console version of the theme. Pretty neat actually.
I felt myself frustraded playing the story expansion, they got that entire "redemption" arch of Heihachi in Tekken 7 for nothing. I wasn't expecting him to change completely like he did with the memory blocking. But at least questioning himself a little bit about what he's done, like in 7's...
Maybe he is, we don't know yet. Yes, kicking the shit out of the monks was a dick move, but then he says "Everyone sit back, I'll stop Kazuya." At this point Heihachi is never not gonna be an asshole, but we'll have to wait and see if he's changed at all after what's happened. We barely got to see anything of where he's at now.

Tekken 2 thru TTT1 had some of the best character themes in tekken history, and then they just dropped it for stage themes and rarely acknowledged the old music anymore save for the odd novelty track here & there (Devil Within, Fuji TTT2, etc). I'm glad to see the legacy return. Now, we need a really good remix of Kazuya's T2 theme (Didn't like the Smash one)
