This is the recipe of an Instant bamboo shoots Pickle in 20 minutes!

Recipe:
Instant bambo shoots Pickle
Preparation Time: 20 minutes
Cooking time: 10 minutes (bamboo shoots)boiled
Ingredients:-
Bamboo,green black-eyed peas
1-garlic
2-ginger
3-chilli
2 tbsp cumin
2 tbsp corinder
2 tbsp thyme
1 tbsp black pepper
1 tbsp Szechuan pepper
10 tbsp fennel
4 tbsp mustard seeds
2 tsp fenugreek seeds
4 tbsp kashmiri red chilli powder
2 tsp turmeric
3 tbsp salt
½ cup mustard oil
2 tsp mustard
¼ tsp hing
Method:
In a large pot, boil 1 litre water. Add the bamboo shoots ,cook for 10 minutes and remove from heat.
Cover and rest for 15 minutes or until bamboo shoots softens.
Remove bamboo shoots from water and pat dry.
Chop the garlic and ginger into small piceses then add bamboo shoots and green black-eyed peas take into a large bowl.
Dry roast the mustard seeds,thyme,fennel,Szechuan,black pepper ,cumin seeds ,corinder seeds ,and fenugreek seeds till fragrant.
Grind them to a fine powder.
Add the powder to the chopped bamboo shoots with the green chopped chilli,red chilli powder, turmeric and salt.
Mix well.
Heat oil and allow to cool a bit.
To medium hot oil, add mustard seeds & hing.
Pour the oil over the pickle and mix well.
Enjoy instant bamboo shoots pickle.
