Healthy Veggie Filled Meal Prep for the Week! | Salads, Red Pepper Pesto, Blueberry Oat Bars, Soup

blueberry oat bars-
2 mashed bananas
1 3/4 cup milk
1 tsp vanilla powder or extract
1/2 cup sweetener of choice (or omit to make it all fruit sweetened)
2 tbsp ground flax seeds
2 cups rolled oats
1/2 cup unflavored protein powder
1/2 cup walnuts (optional)
1 tsp baking powder
1 1/4 cup blueberries, divided
Mix the mashed bananas, milk, vanilla, sweetener and flaxseeds in a large mixing bowl. Add in the oats, protein powder, baking soda and walnuts and mix to combine. Add in 1 cup frozen or fresh blueberries and stir. Pour mixture into a parchment lined 16x9 baking dish and top with the remaining blueberries.
Bake at 350 for 35 minutes, let cool for 10 minutes before cutting into squares
roasted red pepper pesto
2 red bell peppers
4 small campari tomatoes
1 chopped carrot
1/2 red onion or 1 shallot
italian seasoning
salt and pepper
1/2 lemon juiced
2 tbsp veggie broth (or use olive oil if not oil free)
bake @ 350 for 50 minutes, or 375 for 40
when its done baking add veggies to a blender with:
3/4 cup walnuts
2 garlic cloves
a few basil leaves
1/2 to 3/4 cup water depending on how thick you want the pesto to be
blend for 15- 20 seconds, I like my pesto to still have some texture to it
serve with pasta, on a salad or veggie bowl or on toast
taco veggie soup:
1 onion diced
2 bell peppers
4 oz chopped mushrooms
1 26 oz can crushed tomatoes
2 diced carrots
1 diced zucchini
5 cups veggie broth (I did half water half broth)
2 cups black beans drained/ rinsed
1 tbsp mrs dash southwest chipotle- or sub your favorite taco seasoning
2 tsp chili powder
1 tsp dried oregano
1 cup pea protein crumbles- or any ground protein of your choice
salt and pepper to taste
pressure cook for 6 mins, 20 minute natural release
you can leave it as is or add cashew cream-
1/2 cup cashews-
1/4 cup hemp seeds- both soaked ahead of time for ~30 mins
3/4 cup water
salad-
1 head red leaf lettuce
1 head romaine
1 head green leaf lettuce
1/2 red onion sliced thin
2 shredded carrots
handful of cherry tomatoes, sliced
1 can white beans drained and rinsed
Italian seasoning
I just used a store bought dressing this week for my salads

I took a can of petite diced tomatoes and drained it. Then I dehydrated the tomatoes until completely dry. I crumbled the dried tomatoes and used them in my salad, crumbled on top of my homemade veggie burger and snacked on them…so good. Ground into a powder they make a nice addition to homemade dressings.

I tried the instant pot veggie broth today.I think I might have used too many mushrooms but it will be good in a Lentil soup I'm going to make.
Pro tip, use a potato masher to smash bananas. Easier than a fork!

Perfect timing I have my dried black beans with taco hot seasoning in my crockpot so I added mushrooms, zucchini and onion I would not have thought to add those. Thank-you.

Oh my, every recipe looks just amazing. I’m trying them all. I have a question for you. I was told by “ my friend “ that I shouldn’t eat night shade plants. Well, I looked it up and they are at least 3/4’s of my meals. Have you ever heard of such a thing? Hope you have a wonderful week.😊
I luv Anthonys Pea Protein Powder! I feel like it is cheaper than other powders and I like that I can customize it better since I don't like overly sweet shakes.
This was my first time trying it and I love it too! I was so impressed
Try dehydrating organic frozen peas and grind into powder once dried….the cheapest pea powder there is. You can also add other greens and make powders.

I use a plastic knife to chop my lettuce so that it doesn't react with the metal on a normal knife and go brown

Take turnips and onions cook in some veggie broth then purée ….makes a tasty creamy base for soups.

Do the plant crumbles hold their shape in the soup or do they kinda dissolve? Are those any different from the ones Trader Joe’s just came out with? I gotta make those bars they look so good! I feel like that soup would be really good blended
Yes they do hold their shape! They’re pretty much the same texture as Trader Joe’s just with no seasonings/ salt

Hi, Love your vegan meal prep videos but I'm aware you said something about eating eggs every once in a while. Can you, please make a video explaining why you think that was the best choice for you? Are you eating any other animal products? I'm not the vegan police here but just trying to understand the process.Obviously, you eat mostly plant based and that's always good. What changed your mind?
