So likert scale can be treated as interval data even though formally it is ordinal data?

In Psychology, yes. But in other fields, likert data may be treated as ordinal. It really depends on how likert data is treated in a specific field.

Yes. Mean or sum ng lahat ng items. Depende sa test or instrument pero madalas mean and kinukuha for the overall score.

You can use Ctrl + F then the replace function to manually reverse the scores.
