- If you have never had shada alur torkari before you may look at the recipe and think-boiled potatoes with a nigella-seed tempering-how good can it be? But make it once and you will be shocked at how delicious and comforting this incredibly simple dish tastes. It really lets the potato flavour shine like almost no recipe we can think of. Mashed potatoes are comforting, but they have a lot of butter and cream and salt and pepper. Potato soup has tonnes of other ingredients. Even alur dum and the spicy alur tarkari have other things going on. This has none. It is the purest homage to the Bengali love for potatoes.

Every family has its own variant of the shada aloor torkari. It’s essentially the same dish but with some alterations here and there. All legit. Ours, for example, is the frying method minus the tomato. And in winter we add little florets of phoolkopi to the aloo, a little later, in order to retain the firmness of the kopi. It’s heaven! 😊

Agreed. In my family, the frying method is used as well. I stead of tomato, it is phollkopi in the winters and kumro in the summers. Yumm..
My mom used to make it with half broken coriander seeds as phoron and green chili.
We used to love it with luchi ....its still my idea of comfort food😊

@2:22 A less messy and quicker way of doing this is to put the seeds in a sieve and then lower it into the oil. Let the oil absorb the flavour. Then lift the sieve up. The seeds will automatically be out of the oil.
In our house, my mother makes this shada alur tarkari , and she prefers the second method. But instead of using tomato , she adds a squeeze of gondhoraj lebu at last. And trust me , that smells amazing😋

I have a weird request. I'm currently pregnant and have restrictions over a lot of foods. Especially spicy or fried foods. I live in the USA and the doctors keep on telling me to eat bland food for better digestion like oatmeal, apple sauce, crackers etc. But honestly I like none of those and keep on curving for typical Bengali delicacies. But all I eat is rice, butter, boiled egg and potato. I would be forever greatful if you can show some recipes that are easy to prepare, tasty but good during pregnancy. Thank you in advance.

In "Ghoti" households, the second variation (with kalojeere tempering) is more prepared, and the torkari is called "ছেঁচকি". This one with just potatoes is a little salty, and a version made with winter fresh cauliflower and potatoes is a little sweeter. Both are awesome combinations with luchi.

I donno if the fried method is a predominantly ghoti thing. We are bangal and family and relatives have always used this method; kalo jire shukno lonka kancha lonka… So when I first saw a friend boiling potatos to make the torkari, I was kind of shocked haha

My childhood food memory revolves around this beautiful and simple recipe especially on Sundays.. with phulko luchi 😍My mami makes the 2nd recipe but with the addition of a pinch of kasuri meethi at the end.. ❤

In our household, we use Ghee and Kalo-jeera along with red dried chilli as foron. Then add aloo and a bit of rough ground black pepper. Saute for a bit and then add water. And put on pressure for a bit, maybe 1 whistle. Then it's ready. Good to have this with luchi or parota.

সাদা আলুর তরকারির একটা অন্য ভার্সন আমাদের বাড়িতে হয়। কালো জিরে ফোরণ, শুকনো লঙ্কা ব্যবহার করা হয়। আর যেটা সম্পূর্ণ আলাদা ফ্লেভার আনে সেটা হল কালো মরিচের আধ ভাঙ্গা গুঁড়ো। টমেটো ব্যবহার হয়না। তরকারি টা পুরোটাই সাদাটে দেখতে হয়। লুচির সাথে দারুন লাগে

And all this while my Ma called this sada teler alu torkari as instead of mustard oil vegetable oil is used!
