- In this episode, we take a look at one of the most sought after craftsman in the knife world. Jiro Nakagawa is a true one-man craftsman that works alone in the countryside. He sought out skilled craftsmen around Japan including a master sword polisher to learn the techniques of manipulating traditional materials. He has also practiced the art of calligraphy for over 20 years under the master who lives in Nagano prefecture to enhance his hand-chiselling/engraving. His unique skill sets, humility, and will to improve all of his domain as a craftsman make all Jiro forged items worth treasuring for years to come. We don't know if the demand came from the quality or just word-of-mouth and social media. We find out in this video if it's all hype. Nevertheless, grabbing one of these seems to be quite difficult in a world where there's so few of them. Good luck getting yours!

Ahhh 225mm the size I originally wanted. Happy I ended up with 240 despite it not being the one I thought I wanted. I love it though.
It's funny because I would've probably pick the 240 and I had 225 but I do like odd sizes.
Looks like a beautiful blade in a desirable, and difficult to forge, steel. The handle however looks very anorexic in the forward/choil area. It will be interesting to see long term if you find it uncomfortably small.
Agreed! I have used it since the video and I enjoy it currently. It doesn’t slip in the hand because of the big curves.
Good to know. That is a sexy blade though and should be really easy to make scary sharp.

Coming from a guy with a lot of respiratory problems (and also a fatty) who doesn’t have health insurance and is poor, just wanna make sure you’re doin alright and get treatment if u need it. My issues cause me a lot of discomfort so I hate to hear people breathing like you are
Thanks for asking. Asthma! I get overly excited and induces my asthma. I appreciate you looking out. I have a full-time pulmonologist who keeps me on a lot of medicine. I usually do pretty good but the pollen right now is ridiculous here and then you get excited about an amazing knife. We have lots of people working on it but you can still only do what you can do. And yes I was getting more excited as the video went on.
I have to agree with your wife about everything she said around celery part of the video. I envy your cutting skills.

What a amazing piece. How does this compare to a Fujiwara Denka?
I have them both and I like this one better. The Fujiwara is extremely hard. It cuts great but the fit and finish is lacking. They are known to not be good at their fit and finish. So I will take this one all day.

Considering it was knife of the year, and I have held CUTCO knives and can tell you personally that this knife is nothing like it nor is the handle. You have never felt anything like this knife. They are highly sought after it it’s for good reason.
