Yes rice needs to be stored properly, so as soon as it’s cooked the day before, it needs to be covered and put into the fridge. And whenever cooking the next day, it needs to be re-heated thoroughly. 🥰
Your rice is too wet, regardless of you leaving it over night in the fridge. Buy a rice cooker, they're £20 from Tesco, and they're versatile. They're not only for rice, but also for many dishes. Cook the rice in there after washing it 3 times, fluff the rice, then it will automatically go onto the warm setting. That will further dehydrate the rice, then you can put it in the fridge. If you leave the rice on the warm setting for long enough, you can just cook fried rice the same day if enough moisture evaporates in time. For my rice cooker, after about 2.5 hours on the warm setting, is enough. The drier the rice, the better. Also cook the eggs first with oil, then add the rice later. Add vegetables at the end, because they also contain a lot of moisture, obviously, so that will further create problems making the rice too wet if they're cooked for a long time. Fried rice is obviously notoriously easy to make mistakes with, as you know, after watching Uncle Rodger.
