I’m hoping to go to Germany next year. Then I can try all these Bäckerei treats. I was born in Germany but moved to the US when I was 9. Currently I’m relearning German, I want to be fluent again like how I once was when I was child, then I can talk to my family and friends again without a struggle.
I prefer local bakeries who still produce handcrafted items. Lots of local bakeries have changed to industrial produced items which are of the same poor quality than in the grocery stores.
When I was a child, I'll soon be 60, our baker had bread that was fluffy on the inside and had a hard crust on the outside, I would like this bread back. Just like the juicy black bread with the delicious hard crust 🤤🤤🤤😃
The Palmier (Elephant ear) is just puff pastry you sprinkle sugar on it and roll it in with a rolling pin then fold it and cut slices to bake. The sugar between the layers caramelizes. So it's just puff pastry and sugar. I love learning about German baked goods as an American baker. Although I feel bad for Deana that she can't get a real donut. Also that cupcake texture looked weird. I'm used to much fluffier cupcakes.
As kids we used to go down to the bakery at 7/8.00am to get the fresh brotschen for breakfast, super crunchy outer and soft doughy inner, still warm. Cut and paste with butter, masses of Quark and Oma's plum jam WOW! On Sundays when the family got together for afternoon Kaffee und Kuchen, one adult and the kids were sent to the bakery at around 3.00pm as they were only open for two hours to collect a selection of cakes and a huge 500g parcel of Schlagsahne that the baker had whipped for the afternoon trade. We were only allowed one cake. but the adults occasionally two and masses of cream. What I miss is the Pflaumenkuchen that is only properly produced for two weeks in August when the special plums, that are more sour than desert plums are ripe and are baked on a yeast cake base YUM!
My uncle (passed away recently) owns a bakery next to my grandmas house so we had a steady stream of baked good during summer and winter break in Mexico. The only thing I saw similar that he made that you guys had were the elephant ears which I did enjoy. I enjoyed this little two part series!:)
In my old hometown (Schwabach) where my parents live, we have a backerie it´s called Schmidt (small Chain), they make fresh breadrolls every morning across the hole morning. When I go there and visit my parents, I get breadrolls that are so fresh that the paperbag is still hot when i arive, they are great.
I recently discovered those frozen brotchen from Aldi. It's so much better to have something hot from the oven. I'm sure if I worked at a German bakery I'd be a snob and only eat things fresh from the oven. I loved Phil's reaction to the surprisingly good Graubrot.
One dream I have for NYC post pandemic is that we get a LOT more bakeries replacing some of the businesses which don’t survive. We have so few of them and the few really good ones (like the Hungarian bakery near Columbia University) are always packed. There’s obviously a desire here for bakeries. And a German-style bakery in each neighborhood would probably do extremely well.

I love small bakeries! Unfortunately, I live in the Southwestern US so there’s only one really affordable (Mexican) bakery near me. So unless I can splurge, I do my own baking. (Or grab some Mexican pastries, which are amazing.)
That strawberry cake is a variation of the typical "Sahnerolle" where you take a sheet of dough, put cream on it and then roll it up. Usually the strawberries are inside. Here they put it on its side and put them on top. Not hard to make yourself.
What you call shortcake, is basically rolled cake. It is cake dough, as in Northern European cake, like in our Princess cake here in Sweden. We have the exact same thing that you tried and we call it "rulltårta", which would mean rollcake; it is a cake that has been rolled up - a cake in the form of a roll. You then cut up the rolled cake into portion pieces like this and put e.g. strawberries on top of it. :)
Oh the brotchen and breads. I can not say how much I miss those. Here in Canada we cannot get any breads or buns that can touch the German and European buns and breads. Cannot wait til we visit again
I mostly use half-baked breadrolls (10 in a bag from Penny Markt). You simply put them in your oven/grill for some minutes and you always have fresh and warm baked goods at home. So easy and yummy!
I am looking forward to you testing danish pastries in Kopenhagen when we can travel again. Soooo good! France also has some pretty good contenders in the pastry section. Your "real bakery" did not look very artisanal to me, maybe you can find one where they do their goods by hand?

Yeah, problem with the breadrolls from bakeries in germany is that, most bakeries are getting their dough frozen. So they get most likly the same, or something similar to what you get in the discounter. We have only a view bakeries here left, that do everything from scretch. BUT if you buy those breads and -rolls they taste next level. Especially when they use a old sourdough, its really different. Baking bread is kind of philosophy, you can do it the easy way, or you can do it the right way. The difference is not only to be found in taste, but also in disease. When you use a real sourdough, the gluten in the bread is fermentated in a more digestible way for the human digestive tract. I can't go in detail, because my knowlege ends here. But if you want to make good bread from scretch, search for some sourdough recepies, or get some from a friend, its worth it.
You two must be popular as hell with all your local businesses. When you roll in to buy everything on the menu at the bakery, fast food places, etc., they know they're going to make a big sell.

If you freeze a fresh breadroll, it stays crunchy for breakfast the next morning. Or you get a mini oven and buy the baked ones. they are only 5-10 mins in the oven
I said it before and I say it again: Phil should be an actor or at least a voice actor. Amazing face and great/funny voice. Rolls are very important in Germany. I would prefer a roll from the local bakery over the frozen ones. Amid they are good , but they go faster downhill than a bakery roll. That being said, you´ve got to find the best rolls in town. There are differences.

Decades ago there were local neighborhood bakeries everywhere. They’ve all been squeezed out of business by the big grocery chains. It was good to reminisce watching your 2 part video and please monitor your glucose occasionally, diabetes is no fun.
Muffin or Cupcake thats a touch question.Can I have both? Bread rolls normaly only fresh from the local bakery for breakfast,but frozen is ok as well. I definitely agree on the breadroll topic, coppenrath und wiese breadrolls fresh out of the oven are amazing but if you want to make sandwiches or take them somewhere bought breadrolls are superior since they just keep better
I don’t like the plastic that comes with the frozen C&W Goldstücke bread rolls. But from a pure taste and freshness they are really really good. I highly recommend the Dinkel, Roggen and Classic Weizen versions. 12 minutes at 125 degrees in an air fryer and they will turn out perfectly 👌
Marzipan mag ich auch absolut nicht, aber an einem Friesenstreusel aus der Bäckerei kann ich nur schwer vorbei gehen. Vielleicht kommt euch das cremige Teil ja irgendwann auch mal unter:-)
Wow...a two-tone Croissant... ;-)) My local bakery sells that Ochsenauge-thing as Pfauenauge (peacock eye).... and it's with marzipan on the outer ring ;-)) ...and the Schweinohr is called Palmier (palm leave) in french... it's my absolute favorite (everything with puff pastry)... it's a 10/10 for me though.
You guys did a very good job in eating that much! Especially in germany we were not able to eat that much! We've left Germany 3 Months ago und now live in Virginia, near Washington DC. We have a Plank bakery in our Rewe, it isn’t bad. But we have a small town bakery and their stuff is far superior to the plank. The plank is good if I’m wanting something as I buy my groceries but definitely prefer the town bakery.
Donut instead of cup cake, and fresh bread rolls instead of the other pityfull stuff, which I would only buy knowing that the backery would be closed or somehow not avaiable for several days. It takes AGES before the bread rolls from your personal oven have cooled down enough to prevent the butter to insteadly melt away. But once they have cooled down enough, they loose the fight against the backery stuff.
Your gray bread looks like rye bread. Is it the same? My grandparents were German and they always had rye bread ( no seeds). Love it. Please keep making your videos. One day I’ll get to Deutschland!
Phil, you are absolutely right in my opinion. It's mainly freshness that makes baked goods good. I ate my best Franzbrötchen ever at the underground station at Landungsbrücken, not because they make particularly good Franzbrötchen, but because it was 5 a.m. and they just came out of the oven, so that the whole underground station smelled of cinnamon. In principle, it doesn't matter whether it is a supermarket or a small bakery, in my opinion, both simply need a large enough turnover so that they need to bake during the day in order to be really good.
America invented a cake that we call "German Chocolate Cake". I imagine that actual Germans would be confused by it since it is a chocolate cake with custardy icing which contains coconut and pecans. It turns out that it was invented by an English American whose last name was German. But most Americans have no idea and we commonly associate this cake with Germany.

Muffins or Cupcakes,... I think I don't need to thave either. In my opinion they're too sweet tasting. I prefer hearty things. If I could get a Cupcake or Muffin with onions and ham I'll take it immediately. Waffles with herbs, like rosemary or thyme, thats what I would like more then the sweet ones with whipped cream. Here, where I live, we have someting called "westfälische Kaffeetafel". That's the Kaffee and Kuchen but with Stuten (Wheatbread from a traditional reciepe by Oma) and Schwarzbrot (Pumpernickel) with Cheese, Leberwurst or westfälischem Schinken (a ham seaoned in a special way and then air-dried or smoked).
I grew up on Bauernbrot and Brötchen, the only thing I hated about them was, I had to run to Oma's bakery every morning to get them. As for cupcakes and muffins, nope, don't like them. The great thing about frozen Brötchen, you don't have to go to the bakery if you feel lazy, oven on, bake for a few minutes and done, they are great with Teewurst or Nuss Nougat.

You know, the bread in germany is very very different, depending on where in Germany you are. For me, the best bread comes out of south Germany. (Black Forest!!!)
I am from Canada and for me the best part of European travel is trying the local bakeries which make fresh baked goods daily which is unfortunately hard to find where i am from if there are any they tend to be run by Europeans : )

After spending 2 years living in Germany absolutely loved the mom and Pop bakery and I concur that the one thing that blows my mind if the lack of a good chocolate cake in Germany really why not sure but missed a good chocolate cake! Had to make my own and a Guinness chocolate cake was the best and easiest!

One of the bakeries here has a walnut-apple-chocolate cake. It is sooo good. Also lots of other chocolate cake stuff. With the best chocolate frozing.

The strawberry item is made out of sponge cake dough (Bisquit), covered with a thin layer of cream, rolled up and turned vertically. ;-)

You know, you could buy some bread rolls in your bakery and just put them in the oven for 1 minute (at 200 °C) and it's perfect.
My choice between muffin and cupcake is the Nougatkringel.

Donut instead of cup cake, and fresh bread rolls instead of the other pityfull stuff, which I would only buy knowing that the backery would be closed or somehow not avaiable for several days.
It takes AGES before the bread rolls from your personal oven have cooled down enough to prevent the butter to insteadly melt away. But once they have cooled down enough, they loose the fight against the backery stuff.

Your gray bread looks like rye bread. Is it the same? My grandparents were German and they always had rye bread ( no seeds). Love it. Please keep making your videos. One day I’ll get to Deutschland!

Phil, you are absolutely right in my opinion. It's mainly freshness that makes baked goods good. I ate my best Franzbrötchen ever at the underground station at Landungsbrücken, not because they make particularly good Franzbrötchen, but because it was 5 a.m. and they just came out of the oven, so that the whole underground station smelled of cinnamon. In principle, it doesn't matter whether it is a supermarket or a small bakery, in my opinion, both simply need a large enough turnover so that they need to bake during the day in order to be really good.
A few seconds in the microwave really does wonders to freshen up a lot of baked goods.
Aren't they like giving you weird looks in those bakeries, when you order pretty much every item? xD

America invented a cake that we call "German Chocolate Cake". I imagine that actual Germans would be confused by it since it is a chocolate cake with custardy icing which contains coconut and pecans. It turns out that it was invented by an English American whose last name was German. But most Americans have no idea and we commonly associate this cake with Germany.

I think I don't need to thave either. In my opinion they're too sweet tasting. I prefer hearty things. If I could get a Cupcake or Muffin with onions and ham I'll take it immediately. Waffles with herbs, like rosemary or thyme, thats what I would like more then the sweet ones with whipped cream.
Here, where I live, we have someting called "westfälische Kaffeetafel". That's the Kaffee and Kuchen but with Stuten (Wheatbread from a traditional reciepe by Oma) and Schwarzbrot (Pumpernickel) with Cheese, Leberwurst or westfälischem Schinken (a ham seaoned in a special way and then air-dried or smoked).
I grew up on Bauernbrot and Brötchen, the only thing I hated about them was, I had to run to Oma's bakery every morning to get them.
As for cupcakes and muffins, nope, don't like them.
The great thing about frozen Brötchen, you don't have to go to the bakery if you feel lazy, oven on, bake for a few minutes and done, they are great with Teewurst or Nuss Nougat.
Actually, I prefer Brezeln and Laugenstangen frozen and baked up at home. Rest is bought at a good bakery.

You know, the bread in germany is very very different, depending on where in Germany you are. For me, the best bread comes out of south Germany. (Black Forest!!!)

I am from Canada and for me the best part of European travel is trying the local bakeries which make fresh baked goods daily which is unfortunately hard to find where i am from if there are any they tend to be run by Europeans : )

After spending 2 years living in Germany absolutely loved the mom and Pop bakery and I concur that the one thing that blows my mind if the lack of a good chocolate cake in Germany really why not sure but missed a good chocolate cake! Had to make my own and a Guinness chocolate cake was the best and easiest!
