How to make bruschetta in three different ways.

  • When My friends are coming announced, I always make some Bruschetta for them. It's both fast and delicious and allows for endless ingredient combinations.
    These are 3 variants of bruschetta that I like.
    Ingredients:
    White Classic Bread - or sourdough, baguette, etc.
    tomatoes - I like using a mix of cherry tomatoes
    Good Extra Virgin Olive Oil
    Garlic
    Basil
    Balsamic Vinegar
    For variants:
    Ricotta
    Pesto
    Mozzarella
    Let's make the tomato salad ( I say salad, cause usually I like to eat it as a salad in hot summers )
    We dice the tomatoes or cut them in half if we use cherry tomatoes. We dress them with Olive Oil, salt, garlic, and basil and leave them aside for a few minutes for the juice to come out.
    We can use half of the tomato salad and cook in the oven for 10 -15 min at 180°C ( 365 °F )
    We cut the bread into 1-inch thickness or 2.5cm, spread some olive oil, and put it into the oven for 3- 5 minutes at 180°C or 365°F until golden brown, flip the bread and cook until done.
    Now we are ready to assemble the bruschetta
    1. Classic Bruschetta
    Bread, we rub some garlic on it and spread a good amount of tomatoes. drizzle some balsamic vinegar and enjoy!
    2. Bruschetta with Ricotta
    Rub some garlic on the bread, spread fresh ricotta, and put tomatoes on top!
    3. Bruschetta with Pesto and baked tomatoes.
    One of my favorites is the one with Pesto. Again we rub some garlic on the bread and spread a tablespoon of Pesto. Add the baked tomatoes and some fresh mozzarella. Drizzle some olive oil and enjoy it!
