I just wanted to say thank you for this recipe. We got some Dungeness crab for Christmas and we wanted to try our favorite way of eating it. It turned out so good and almost exactly how we eat it at our favorite Chinese restaurant here in NYC “Congi Village”. So thank you so much for posting it. Happy Holidays wherever you are!!!
Yes it looks mouth watering. Messy to eat, but who care, LOL... as long as we enjoy the delicious crab meat inside with gingerly taste. Thanks for watching.
A classic family recipe. My mother, in place of rice wine, used one shot of Gilbey's London Dry Gin (40%) because she found that it compliments the ginger and green onion taste. Now it has become my favourite, one day I have to try myself!
That's great! You can save a lot by making other chinese cooking here in . I am very happy that your Dad like it. I know he is very proud of you. Thanks for watching.
dungeness crab is perfection. i bet this was the ultimo creation. they are a lot of work to get to what is arguably the best crab ever. so, chef, do you pick and work as you go or get that tasty pile so you can cram forkfuls into your mouth? i do the work and get the pile. drives people nutty.
Looks terrific, Chef. Two questions. Is there a western equivalent of Chinkiang vinegar, that you could suggest? Can this be made with fresh lobster? One of my favorite dishes, from the 1960's, was lobster cantonese (made with fresh lobster, in the shell). Thank You. Ed
Thanks for appreciating this cooking. Exact equivalent to chinkiang vinegar? Sorry I have not try western type yet. Maybe cider vinegar may work? Lobster instead of crabs? yes, it will work too. Thanks for asking and thanks for watching.
I would think a white wine vinegar. Or even seasoned rice vinegar would be nice. Its just a thought to help. I know how hard it can be getting items to work for a recipe ✌️😊✌️
Tq so much for sharing wif us this video. Love de way how u started by showing all de ingredients u used for ur cooking so precisely 😁. I wonder if de hot oil splashed out crazily when u deep fried de crabs?
Thanks for appreciating my cooking video presentation. Deep frying crab in hot cooking oil, doesn't splashed out crazy like when we do with squid. Thanks for watching.
Yes you can use blue crabs, although that is smaller than this type. If Mud crabs are available, then that would be the best for this type of preparation. Thanks for asking. Thanks for watching.
Looks delicious! A video of how to chop this crab into bite size pieces would be awesome because I have no idea how to do that. Is hot bean paste different from chili bean paste?
Oh my ! Is this sauce similar to Lobster Cantonese sauce? I’d like to make Lobster Cantonese for my aunt for New Years as the only Restaurant to make it locally wants $45.00 Thanks for all your wonderful recipes good sir! ✌️❤️😁
This is the one dish in restaurants I’ve always disagreed with. I would rather eat crab or lobster steamed and then dipped in garlic butter (American style, I guess) than this kind of preparation, where almost all the flavor sits on the shell instead of the meat. However I still appreciate learning how they make this dish and I always love your videos.
Thanks for letting me know, how you like your way of preparation. I just like to show the viewers, how this is prepared in chinese restaurants. For me, honestly speaking, I just like it steamed and then cracked the shell , then dipped into light soy sauce + chinkiang vinegar + minced garlic + minced ginger. Thanks for watching.
Yes, they are steamed and cooked right away after they are caught commercially. But if you got live one, the better. Just follow the same procedure, since they are cooked in few minutes. Thanks for asking. Thanks for watching.
Thanks for the video. Always worth a watch no matter what you're cooking! One comment though on the subtitles. In almost every video you make you say "Bring to a boil". I know it might sound weird but in English people say "Bring to the boil". What you say might not be technically incorrect but it sounds odd. I wouldn't mention it only that I see it so often. Thanks again!
Thanks for appreciating my cooking videos. As you know, english is my second language. I am still learning english grammar. Most of the time I check chinese to english translation book. Maybe that book some mistakes? Thanks for watching.
Not possible with apartment type electric stove. But It still can cook most chinese cooking. ( practically most viewers got only electric stove) Thanks for your opinion. Thanks for watching.
Delicious recipe ! DUNGENESS is my favourite of the main commercially available Crabs ! Thank You !
Thanks and also thanks for watching again.

You can get Chinkiang vinegar in Chinese supermarkets
Balsamic vinegar could work. It's not perfectly the same but close.
I would think a white wine vinegar. Or even seasoned rice vinegar would be nice. Its just a thought to help. I know how hard it can be getting items to work for a recipe ✌️😊✌️
What is pre mixed sauce? Is it. readymade?
That is we mix in advance by our own. To incorporate during fast stir fry cooking. Thanks for asking. Thanks for watching.
