DUNGENESS CRABS IN GINGER SAUCE

  • For Seafood lovers. Here is a delicious cooking that you might like. Messy to eat but tasty never the less ( don't forget to lick your fingers afterward, LOL ). NOTE: Dungeness crabs here in the USA, comes steamed cooked & frozen immediately, to preserved quality. You may used fresh one. Just clean it and chopped to serving pieces before cooking. Enjoy. Below -- list of ingredients: so you can copy-paste-print the list. Again , thru the effort of Mr. Michael Taylor, who helps me, type this list.
    List of ingredients:*created by HAPPY WOK*
    2 ----------- Dungeness crab
    1/2 cup ------ corn starch (for crabs)
    4 to 6 cups -- cooking oil (for deep frying)
    2 Tbsp ---------- cooking oil (for stir fry)
    1 Tbsp ---------- chili oil
    3 oz. ---------- ginger (julienne into thin strips)
    ** premix sauce:
    3/4 cup ----- chicken broth
    2 Tbsp ----- each, light soy sauce & rice wine
    1 Tbsp ----- each, Chinkiang vinegar & sesame oil
    1 tsp ------ each, sugar & hot bean paste
    ** starch-water mixture:
    2 tsp ---------- corn starch & 1/8 cup (2 Tbsp) water
    ** garnishing: 4 stalks green onion (cut into 2 inches lengths

    I just wanted to say thank you for this recipe. We got some Dungeness crab for Christmas and we wanted to try our favorite way of eating it. It turned out so good and almost exactly how we eat it at our favorite Chinese restaurant here in NYC “Congi Village”. So thank you so much for posting it. Happy Holidays wherever you are!!!

    A classic family recipe. My mother, in place of rice wine, used one shot of Gilbey's London Dry Gin (40%) because she found that it compliments the ginger and green onion taste. Now it has become my favourite, one day I have to try myself!

    Looks delicious! A video of how to chop this crab into bite size pieces would be awesome because I have no idea how to do that. Is hot bean paste different from chili bean paste?

    dungeness crab is perfection. i bet this was the ultimo creation. they are a lot of work to get to what is arguably the best crab ever. so, chef, do you pick and work as you go or get that tasty pile so you can cram forkfuls into your mouth? i do the work and get the pile. drives people nutty.

    Looks terrific, Chef. Two questions. Is there a western equivalent of Chinkiang vinegar, that you could suggest? Can this be made with fresh lobster? One of my favorite dishes, from the 1960's, was lobster cantonese (made with fresh lobster, in the shell). Thank You. Ed

      You can get Chinkiang vinegar in Chinese supermarkets

      Balsamic vinegar could work. It's not perfectly the same but close.

      I would think a white wine vinegar. Or even seasoned rice vinegar would be nice. Its just a thought to help. I know how hard it can be getting items to work for a recipe ✌️😊✌️

    I love crab but its alot of work to eat, I usually buy just the meat and make Chinese crab and egg omelette with scallion. We get lots of blue crab here in Florida so I will make your recipe next time I go catch my own crab.

      Yes, they are steamed and cooked right away after they are caught commercially. But if you got live one, the better. Just follow the same procedure, since they are cooked in few minutes. Thanks for asking. Thanks for watching.

    This is the one dish in restaurants I’ve always disagreed with. I would rather eat crab or lobster steamed and then dipped in garlic butter (American style, I guess) than this kind of preparation, where almost all the flavor sits on the shell instead of the meat.
    However I still appreciate learning how they make this dish and I always love your videos.

      Thanks for letting me know, how you like your way of preparation. I just like to show the viewers, how this is prepared in chinese restaurants. For me, honestly speaking, I just like it steamed and then cracked the shell , then dipped into light soy sauce + chinkiang vinegar + minced garlic + minced ginger. Thanks for watching.

    Thanks for the video. Always worth a watch no matter what you're cooking! One comment though on the subtitles. In almost every video you make you say "Bring to a boil". I know it might sound weird but in English people say "Bring to the boil". What you say might not be technically incorrect but it sounds odd. I wouldn't mention it only that I see it so often.
