I am safe and well, thank you for your concern. I have now perfected my skills of making soy yogurt from scratch (that was the only food I was worried about, as my fridge is ridiculously tiny... soy beans on the other hand are easy to keep). I may need to restock frozen greens and berries, in the mean time lentil and sunflower sprouts will do as fresh greens. Hope you are doing well 💕from🇫🇷
Hey carine! Yeah I’d say the chocolate whip is very slightly softer peaks than the matcha. Both are still pretty thick however so much so that you need to stir it in the drink in order to actually drink it lol. Hi! I made it following the recipe and the final matcha whipped latte is grainy with pieces of coconut milk? it seemed to be nice and whipped for the first 30 seconds but after I checked back after 2 minutes the whipped part is like green chunky paste. I put only coconut cream and left the liquid in the can! Do you have any ideas how to fix this?
Do you think it would work to sweeten it with fiber syrup or erythritol/stevia etc syrup? I have one with maple flavor that has to be real yum esp in the choco one. I’m diabetic due to treatment with steroids, so the sugar is a problem...
lol I've been wanting to change mine out. The one I used in this episode is a more generic one. When I was in Japan and Korea last year I saw some handmade ones that were ooooo so pretty but somewhere in the tune of $100-$300 for the bowl.... yikes :(
Wil Yeung - Cook With Confidence thank you, I actually ended up putting more than two table spoon for concentration. And also I added the extra Thai tea liquid into my almond milk and mixed it together with honey. So it was kinda of like Thai tea with Thai tea cream on top haha

@@YEUNGMANCOOKING I was using a hand mixer and my coconut cream was pretty thick. I let it sit in the fridge like you said and scooped it off the top. I'm not sure what I am doing wrong. Should I change the coconut milk or the matcha I'm using?
Hmmm that is strange. The only thing I can think of is to make sure that the coconut cream is thick and not liquidy (besides the couple splashes of water to get it going) because that will not whip at all. Does it look really watery the first time you tried making it? The curdling most likely is just chunks of coconut fat which is normal

Yeah the coconut cream is the foundation for this recipe, it needs to be solid like the one used in the episode. That means that there’s a lot of coconut fat content and will whip pretty close to stiff peaks. Good luck ☺️ it’s such a delight to enjoy this so I really hope it works out 🙌🏻

We used “Native Forest Organic Coconut milk classic” (full fat) and put the can in the fridge. It looked pretty firm coming out of the can. I wonder what it could be that went awry...
Hmmm that is strange... perhaps give another brand a shot? Be sure to scoop out only the thick cream part and not the liquid. That is strange tho, that brand should be okay 🤔
You can also whip aquafaba (canned chickpea water) into meringue. Tho it is a bit more finicky - the aquafaba needs to be pretty thick in order for it to work

Hmmm that’s weird, is it super thick? Maybe it needs a splash of water to help it emulsify?

Maple syrup would work but maybe make it a little less thick. Maple sugar would be more ideal if you’re able to find some 😊

Absolutely!! Tho ideally you’ll have to make a concentrated version since you’re only putting in 2 tbsp of liquid. Hope that helps!
