greek cook here, working 20 years in greek restaurants in greece and north europe. this meat is not gyros. gyros is made from fresh pork or chicken layers of meat. this looks like turkish doner witch is made from minced lamb and beef kneaded with a lot of fat, cumin, cinnamon, onion, garlic, salt, pepper and molded. Greek gyros contains thin slices of fresh meat in layers sprinkled with olive oil, salt, pepper, oregano. gyros: www.efsyn.gr/sites/default/files/styles/default/public/2020-08/gyros.jpg?itok=1q7JrXh5 www.toxasapiko.com.gr/wp-content/uploads/2018/12/gyrokot.jpg doner: www.recipetineats.com/wp-content/uploads/2020/07/Doner-Kebab-Gyros-Meat-Lamb-Beef_7.jpg www.recipetineats.com/wp-content/uploads/2020/07/Doner-Kebab-Meat_3.jpg I guess some restaurants in America use doner instead of gyros because it is much easier since they buy the doner frozen and ready to roast while the gyros have to be put fresh piece by piece on the spit and is more difficult to cut. pita is as original as it gets. souvlaki looks great and is 100% authentic, i suggest to sprinkle some lemon on it. greeks use a lot of lemon in all grilled meats. baklava looks delicious. greek salad is nice. never show this version of "greek" frites in my life, looks interesting. mixing tzatziki with any other sauce should be considered a crime worldwide and i'm glad the miami police didn't arrest you :D

Kalamata's olives are the best for olive oil because they're juicy. For me, as a Greek, Chalkidiki's olives are the best for eating them raw. The gyros is not original. Not that is bad or something but the original gyros is made only by pork belly meat. Also don't expect to find in Greece hummus or falafel. They're middle eastern foods and we don't usually eat them. In general most of our dishes here are simpler with a lot less ingredients than what this restaurant uses.
