    Nice! I’ve used a smoke tube with hickory chips in my Weber pellet smoker and added more smoke. Also, I use 100% hickory pellets from Lumberjack which seems to amp it up too. Looking forward to your brisket cook.

      Yes I've heard great things about lumber Jack's! I just got some knotty wood but I'll try the lumber Jack's next time!

    I dont have a camp chef but use the woodwind controller. I normally run it at 240-250 at smoke 10 for 3-3.5 hours then wrap for 1 hour (smoke 1) then opened up for .5 with glaze or sauce. If everything checks out of course. Bark, pull back etc. Happy to see this video and looking forward to the brisket. Get the some pitboss freedom blend pellets a try. I really liked them.

      Thanks for the insight! I'm experimenting a lot right now with the temperatures so the info is helpful. I heard good things about pit boss pellets and dollar for dollar they might be the best pellets to get!

    I have a pretty inexpensive Z Grills, and I use a pellet maze. And I never have a problem getting a perfectly good smoke level.
    I also have a rack that raises my cooking surface up by about 4 inches. Almost like having a 2nd cooking rack.

      That's a great way to get more smoke flavor too! And yeah, that's what I would do if I didn't have the second rack. Just buy a foldable one.

    Great video! I use hickory pellets on a Pit Boss
    I trim the brisket Jirby style
    1hr - smoke setting. I do put the brisket on before I start the smoker to get as much smoke as possible.
    2hr - @ 225
    4hr - @ 250
    2hr ish - @ 300 until middle of the brisket is 195ish

    Fantastic video my friend. I’m using my pellet grill when we have a fire ban in my area. Its great to use different cookers through the year including the pellet smoker/grill option.

    Have never owned one, I use an offset and a WSM but definitely want one. Just want the convenience of it during the week!

      Yeah man! They are so convenient, nothing like putting on a brisket going to bed and waking up to dark bark and rendered fat 🤤 but love my offsets and wsms too!

    That was a great video! Those ribs still were delicious I bet! I too like the Bear Mountain pellets. I have a Memphis Pro pellet grill and that produces some mighty fine smoke. Really nice cook! Cheers!

    Mesquite pellets definitely provide more flavor than other woods from the same company. I just don’t love the flavor. It’s “earthy” to me.
    Bark on those ribs looked awesome though! I’m sure I’ll get another pellet smoker at some point down the road.

      Yeah I hear that a lot that some people don't like the flavor and that's valid. The wood burning process and fuel for pellet smokers are pretty unique so the flavor will be different. but so far on the cooks I've done, the smoke flavor was great for me. But I havent done a side by side comparison yet with an offset.. Yeah, I hope you give it another try, bro!

    Ant, question. Any tips on how to get smokier flavor on the WWP36? I have been experimenting with using wood chunks and wood chips in the smoke box in combo with each other during each cook. Some cooks give stronger smoke flavor than others, even though I start each long cook at 190F and wood refill in smoke box every 30 mins for the first 4 hours. I have tried to see whether adding wood every 30 mins to my burnt pile in the smoke box produces more smoke flavor vs dumping each batch every 30 mins before adding in the next batch. Doesn’t seem to help me dial in the smoke any more than normal. Maybe because of the water pan I put on bottom rack while brisket is on top rack? Any advice you can give is greatly appreciated!

      hahaha no just another smoker to do content with. Still will interlace offset, wsm, and kettle videos throughout the week. I have the woodwind 24, and I think its plenty big for a brisket or anything you would want to cook (you could do 2 briskets on both racks, but I don't think the bottom rack is optimal to cook on [do able though]). So if you're just looking to get one to use in a pinch i wouldn't spend the extra for the 36. Just my opinion though

    Madd scientists has a video where he uses a bunch of pellets and supposed that knotty wood is supposed to infuse great smoke flavor in comparison to the other brands

      He told me he likes almond for the bark, and plum for the flavor with the knotty woods. I bought a bag of almond and I'll give it a try on my next cook!

    I had one. It was not good. Flame went out. Burned food where the burn pot is. Temp variation was way too much. It was a pit boss so others may be better

    I love my pellet grill but let's be honest..... The flavor just isnt there. But when I'm lazy it's my go too👍

      Appreciate your take! Honestly, I think the smoke flavor is good if you use the right pellet. Biggest problem is the fat rendering so slow on the pellet. But I've been experimenting the last couple weeks and I feel like I'm making progress on dialing in the technique.

      yeah, like i said in the video, that's the biggest complaint about pellet smokers. But from the tricks I use in this video, I think the smoke flavor is great. I need to do a side by side test with one of my offsets. But the brisket I cooked tasted amazing and my guests thought I cooked it on the 250

      @@AntsBBQCookout do the side by side. Pellet grills make pretty good food, but not compared to anything that burns splits. But I guess this is all subjective. Great video

      @@MadHouseBBQnyc I think If I had to guess the result of a side by side, offset will win. But I've been using an offset at least once a week for almost half a year, and the fact that the smoke flavor on the pellet didn't stand out to me as lacking was surprising. So I think the result will be close!

      If you have a smaller pellet grill that does not have a second shelf. What method would you use to smoke a brisket?
