Thanks. Just saved myself £7.50. The fancy glass bottles of caramel syrup sell for approx £7.99 in cafes/bars etc. This cost just under 50p for the sugar. I refilled a glass bottle and it was just as delicious as shop bought (While the pan was out, I went on to make 2 trays of salted caramel toffees. Another massive saving.)
For anyone who will actually make is as noob like me, make sure you put the sugar on the lowest heat you have as it can easily burn. And when you are about to put the water put it fast and VERY becareful as it will splash and you can easily burn like me.
To avoid clumps, you can start with a little sugar and keep adding it slowly. Waiting each time until the sugar has melted. If you keep burning your product, you can add about a teaspoon of water before you put in the sugar. Great recipe👍

When I added my boiling water to my melted sugar the melted sugar balled up and turned hard. I ended up throwing the hard ball of melted sugar away but the boiling water still tastes like caramel. Will the syrup still work correctly?
If you mix it from the beginning, it will be a very tasty syrup, but it won't be caramel syrup. Caramelization process make the caramel taste. Thanks for watching

It looks simple, but it ain't easy :( I tried to make this not only once or twice, but THREE times tonight and still failed xD The first time my caramel hardened as soon as I added the water. Second time, the sugar crystallised into lumps instead of melting, probably because of sugar crystals in the pot from the first try. Cleaned my pot well and tried a third time, but the caramel hardened again :( I give up, at least until tomorrow!!!
There's 2 types of caramel preparation. If the dry not working, try the wet caramel and add a bit of lemon juice so crystallization will be avoided, 2nd just leave until it turns amber brown golden then add small amounts of water slowly until all is poured into mixture
then don't add it. basic caramel just need sugar and heat "water if you want to make it easier but you CAN do it without water" salt is also not necessary. I like caramel tasting like just caramel so i dont add other things like vanilla.
Maybe you took it off too soon from the heat, if it just tastes like sugar you could let it cook just a tad bit longer to make the color darker, and if that still doesn't work you could try it with a bit darker sugar (brown sugar), they taste deeper in general already :)

use a bigger pot or keep the pot in place and just kill the heat so it doesnt cool down that fast
