Will actually be doing quarter pints for us but I'll throw them in the pc with a batch of half pints of potatoes (yes I do everything is smaller jars as it's just 2 of us). I may try dry packing 1 jar to see how that works 🤔
Is canning something you do month to month or do you have a time frame during the year where you do all your canning and then you're done until it's time again the next year?

Hi. I liked your simple recipe. It’s great for how I cook, my question,, what type of canner? How do you know how much pressure, I couldn’t see a gauge. Right now I only do water bath methods since I haven’t acquired a pressure canner. Thank you.
Hi! Any pressure canner will work I prefer a Presto weighted gauge canner. It depends on your elevation, for my area it is 10 pounds of pressure for 35 minutes. You can check out this blog post on how to pressure can them. www.lewisacreshomestead.com/jalapenos/
I'm curious, is there a reason why you diced them instead of slicing them? Can you slice them without throwing away the seeds? If so, does it affect how hot they will keep later or shelf life?
Yes I think the canning process would work. I'm just not sure if the heat would kill the good/bad bacteria present since they are fermented. You may want to look into that.

We like just about everything pickled except for peppers, lol. They are so easy to use in recipes!

How much time do you think the smallest jars would be ?
For half pints and pints they process for 35 minutes.

We prefer them diced. You can prepare them however you want. Adding the seeds will add more heat.

No, since they are not pickled and not acidic they need to be pressure canned.

USDA book has you ovenroast to remove skins ... want to can some HATCH using your method

@LewisAcresHomestead Well it's pretty much what you just did. My recipe calls for covering the mushrooms with water and processing 40 minutes.
USDA does show how to can jalapenos.
