    Dear Friends ! Today I am showing you how to make Beet Kvass which is a popular drink in Eastern Europe . It's rich in probiotics and has lot's of health benefits ! . Perfect to try in this scorching summer and during home quarantine . Taste wise it's so amazing that it can easily beat any commercial soda drink / carbonated beverages .
    The recipe is in description too .
    I wanted to give it a twist hence added little bit kombucha for better fizz and carbonation . During 2nd fermentation of Kvass you can add any of your favourite fruits, herbs or spices . I didn't want to make it overwhelming hence only used funnel seed and passion fruit for the flavor. The final product turned amazing with right amount of sweetness and sourness and fizz / carbonation. Right now Singapore is hot hence fermentation went very fast and lot of co2 was produced with in short period . I kept the flip top bottle in fridge before opening for few hrs but it was still beyond control . Felt little sad since so much Kvass was wasted but was also happy that my experiment went well with Kombucha .
    I also want to talk about Kanji, which is famous in North India as gajor ki Kanji in which they mainly use purple carrots . They also use muster seeds and chili powder but I didn't wanted to make it spicy hence only used few ingredients . Kanji people make in winter and in a earthen pot but I feel it's risky specially doing it in summer , since the chances of getting mold is higher . That's why I have used an airlock system, which protects ferments from getting oxygen but allow Co2 to release and hence protect from mold.
    It's necessary to use airlock in summer , one of my airlock didn't work properly and I got mold hence I emphasis on using an airlock.

      Great - I make Kanji/Kvass often but was looking to add more carbonation. 2nd fermentation is the trick. Can it store longer too like commercial drinks?

    Wow mindblowing! I like Kvass and it's really good for health to drink Kvass regularly. Never thought to mix with Kombucha. And with passion fruit I can imagine how nice it will be.

      It's part of fermenting :). Overflowing and spilling is quite common when we are not taking care while opening the bottle :). Cheers!

    That was very informative, and straight forward at the same time. I heard that you can use the same beets to make a second batch. Is this true?

      Oh yes ! You can reuse the beet for next batch Infact it will speed up the fermentation process .

    This seems an excellent combo to try Kvass with Kombucha! I can't wait to try it, have made Kvass before but never thought about 2nd fermentation.

    I think if you keep it fermentating in a glass bottle for more than two days the bottle may burst due to internal pressure, honestly the video was so nice with a wonderful BGM 🤘

      It might that's why choosing right bottle and right duration is important . Before opening keeping in fridge for few hours will also help the carbonation to settle down . I kept in fridge for few hrs but should have keep longer . There are bottles which can handle pressure very well and made for fermentation only . Hope you are fine .

    What if it turns to coffee brown color in 48 hours does it mean it has an issue should we consume or let it be thrown out?

      Vegetables turn brown when it has less brine in jar and top portion get oxidised . You can add more brine and make sure all are submerged. If no fungus or mold on top no need to through out .

    I have made beet kvass many times before. For some reason the last two batches I’ve made have appeared different. As I am pouring it into a bottle I noticed it was thick and syrupy. Why would that be? The other batches have all been liquid and not thick. Thanks.

      Hmm from your description I am having a feeling it's Pediococcus infection . Where the bacteria get infected . This is common in beer also . It gets normal in few days to weeks but I think I will prefer to start a new batch . Sterilizing everything and keeping under 25 degree temperature might help .
