- Microscopic footage of milk before it expires, after it expires on its "best-by-date" and after being incubated to speed up microbial growth. I also tested for bacteria at each stage with a petri dish to quantify bacterial colonies.
I believe the most common bacteria after the milk was incubated to be lactobacillus because of the following criteria: gram positive rods, growth on complex medium (milk, Tryptic soy agar), non-pathogenic since the milk was pasteurized, Indole negative, Citrate negative. This is the best guess I can make with the medium and tests available to me in my lab.

I worked in a milk laboratory, you should get hold of raw milk before its been pasteurised or had any treatment, its like a microscopic rainforest, with uncountable amounts of species.
Leaving raw milk out on the kitchen counter overnight makes something very similar to kefir. We have our own cows and goats for milk.

So as someone that's lactose intolerant, I wonder how much of a difference lactose free milk would look like under a microscope since it has a "lactose enzyme" in it that makes the milk last MUCH longer than ordinary milk

I don’t think it did, it only sat in the incubator for one day, and the incubator was set just a bit higher than the temperature used to make fresh cheese. So basically he just made fresh cheese overnight.

I'm just talking about store milk, it is extremely diluted, and many "milk" today isn't really milk but a substitute formula, there have already been quite a few lawsuits in order to stop formula from being labeled as milk or having the word milk anywhere in it's product package.
My unhomogenized lasts longer than regular milk even though they say it doesn't. You just gotta use it once you open it or it loses freshness lol. Has a lot to do with the container too

It's weirdly beautiful how something as simple as expired milk can lead to life
Life is everywhere around us, the whole planet is positively filthy with all sorts of microbes. Milk just so happens to provide a very suitable environment for them to reproduce in because it's so rich in nutrients. We pasteurize it to minimize the amount of microbes in it and refrigerate it so that any microbes that survived pasteurization or got in afterwards can't reproduce as fast, delaying spoilage. In other words, spoiled milk didn't really "lead" to life - life was already there, it just needed the opportunity to thrive.
milk is not "simple". it's a nourishment for new-born life for many species

Teacher showed us milk under the microscope and, egads!, “look at all that bacteria from fresh milk!” Everyone was mortified until he explained what all those “ bacterial colonies” were. He then went on to use that as a lesson for “why you need to know what you are looking at in order to understand what you are looking at.”

I'm a microbiology technician at a large testing company, but I have experience in dairy processing and this took me back to my first job right out of college. I vividly remember checking samples of milk under the microscope like this. If I'm not mistaken that's probably a Lactobacillus species, but I'd need to test it to be sure since it could also be a coliform bacterium.
I suspect lactobacillus as well. I conducted some test I had available and posted my results in the description.

@Aden hui he did much more than that. If you knew how much effort it actually takes to clean expired milk from a microscope stand maybe you'd know that it takes a lot of effort. Not only that, but immersion oil used for 1000× lenses is expensive.

Its be interesting to see you do one with JUICE. We had a container in the fridge, and for months we didnt know there was the tiniest bit left (it was one of those frozen juice things you mix with water, well the mold and bacteria got so bad it was pushing the lid off. We didnt want to release any spores by opening it. Would love to know what would have happened though.

Depends on which microbes get into the juice. If yeast gets established quickly enough you will get a low quality wine. If said low quality wine were to sit out for long enough you are likely to get acetic acid producing microbes which would create vinegar.
