Making paneer at home is quite simple! Here's a basic recipe:
Ingredients:
1 liter of milk (full-fat milk works best)
2-3 tablespoons of lemon juice or vinegar
Instructions:
Pour the milk into a heavy-bottomed pan and bring it to a gentle boil over medium heat, stirring occasionally to prevent scorching.
Once the milk comes to a boil, reduce the heat to low and add the lemon juice or vinegar gradually, stirring continuously.
Keep stirring until the milk curdles completely. You should see greenish whey separating from the curds.
Remove the pan from heat and let it sit for a few minutes.
Line a colander with cheesecloth or a thin cotton cloth and place it over a bowl.
Pour the curdled milk into the colander, allowing the whey to drain out. Rinse the paneer under cold water to remove the acidic taste of the lemon juice or vinegar.
Gather the cloth and squeeze out excess water. Shape the paneer into a block and place a heavy object on top to press it down.
Let it sit for about 1-2 hours to set.
Once set, your paneer is ready to be used in various dishes like curries, stir-fries, or grilled dishes. Cut it into cubes or slices as needed.
You can also flavor the paneer by adding herbs or spices to the milk before it curdles. Experiment with different flavors to suit your taste!
