Anyways to answer your question. I use photoshop and after effects. Pretty much once you get the basics of those two programs, you can do a lot with that.
I make my tracks out of basic materials so it's easy to take a track down and build a new one. I don't have separate pieces of wood or anything, it only takes a few hours to take down a track and build the next one. I'm not a big fan of keeping tracks on large pieces of wood because It would be harder to upgrade the tracks to be higher quality as I go on.
