    Ingredients:
    5 Lemons
    1/3 cup (80ml) Lemon juice
    2 tablespoons Lemon zest
    1/2 cup + 2 tablespoons (125g) Sugar
    2 cups (480ml) Heavy Cream/Double cream
1 teaspoon Vanilla bean paste (optional)
    Method:
    1. Wash the lemons well and let them dry.
    2. Cut lemons in half longwise, then using a spoon, scoop out the inside of the lemons. Do it very carefully.
    3. Place the lemons you scoop out in a sieve and squeeze 1/4 cup of lemon juice.
    4. In a small saucepan mix sugar and lemon zest. Add heavy cream.
    5. Heat over medium-low heat, bring to a simmer, stirring constantly. Simmer for about 3 minutes. *until you see gentle bubbles.
    6. Remove from heat, add lemon juice and whisk to combine. Allow to cool for 10 minutes.
    7. Strain through a fine mesh strainer to remove zest - this step is optional.
    8. Pour the mixture into the lemon shells. You also can serve in on cups/ramekins.
    9. Allow to cool completely to room temperature, then refrigerate for at least 2 hours or until set. Keep covered in the fridge.

@@TheCookingFoodie I made the lemon posset a few days ago and it came out beautifully. Serving it up in the lemon skin made it look really fancy too. I'll definitely make it again. It was delicious. Thankyou. 💜

@@peezy5150 Lol. I have a large lemon tree that seems to produce a never-ending supply of them. I wouldn't buy a large quantity of them, they can be quite expensive here in New Zealand, limes are even worse.

I've been wanting to try this for months now. I finally had some heavy cream and lemons at the same time, so I whipped it up while cooking dinner. Distracted. No verbal instructions. I'm not a stupid person, really. But sometimes I do stupid things. Instead of a half cup of sugar, I thought it said two cups. A complete waste of fresh lemons and ridiculously expensive heavy cream. But I still have faith in the recipe. I'm gonna try again, hopefully soon.

I sometimes am amazed at my ability to screw even the simplist of dishes. Somehow my final product ended being a liquid, even after setting it in fridge overnight. Now that being said, it still tasted amazing. There was no fault with this recipe, i just messed up. I am going try this recipe again in the future. Overall this is a really good recipe. 👍👍👍

@@bmbullman Ahh, that explains. I think there's likea reallyyy exact line one has to monitor when it comes to heat and how long since I did mine and mann it was like thick and creamy. Although for the family, it was good, imo wanted it to be sliiightly more smooth.

Is the sugar for sweetness only, or will reducing it, or swapping to a sweetener affect the final quality? In the interest of serving this to a few friends that cant have large amounts of sugar per their doctor.
