Friendo, AU, as in, "Alternate Universe", literally refers to any differing path in a story or action. It doesn't matter whether it is a timeline difference or a full universe change. E.G. If I went back or forward in time and changed the course of a timeline, it would be an AU as it is now an "alternate" path in the original story. People make Dusttale and Horrortale out to not be Aus because they are a continuation, but that still makes them Aus as those events in them are not present in the original Undertale story. Remember the original multiverse theory is, simply put, the belief that for every action we take there is an opposite path, or multiple paths that could have been taken differently that change the whole flow of life. Like a reverse mirror world. Alternate Universe(AU) literally just means any world that has taken a different path to the original. It could be as small as a flower being picked from somewhere in one timeline, but not being so from another, it is still an alternate universe that has a slight change in action even if it hardly affects the rest of the story.
One more thing in fact, to put it the most simply, the genocide, neutral, and pacifist timelines in the original Undertale are technically Aus themselves as they are all different paths for the same story. With true pacifist of course being the "main canon" ending. But still, they are alternate universes in which we are either a good character or evil.
