I’m 48. Never really cooked for my family because my hubby and I have always worked long hours. Now we have moved to Portugal! I get to do freelance work now so I have spare time! But I am clueless on cooking! I am SO glad I found your channel! It’s a blessing. Reminds me of the south (I’m from Texas and Georgia). You have simple recipes. I don’t have a garden or chickens are any of that stuff! So I love that your meals are so practical. I write down notes on each of your videos! Hi Karen. I just discovered your channel and now I'm hooked. I figured I'd share how I do my tomato sauce. I don't really have a recipe but what I usually do is lightly sauté some garlic in olive oil, add a can of good plum tomatoes (San marzano tomatoes are the best), some salt and fresh basil at the end and you've got a great sauce. I like using the whole tomatoes and crushing them by hand but a can of crushed tomatoes will do just fine. If I want a richer sauce I'll add some Celery, carrot and onion. Plus some red pepper flakes if you like a little kick. It's perfect as is but serves as a great base for a meat sauce and so many more things. Keep up the great work! Wish I could share a meal with you!

And I know everything is made with Love ....the most important ingredient. ❤️ 🙏🏻✨️😊 My simple sauce recipe : • San Marzano crushed tomatoes ( I use Cento brand ) • Tablespoon and a half tomato paste ( I use the one in a tube ) • Chopped fresh garlic( 2 cloves, more if desired) • Italian seasonings, Basil, Oregano ,grated Parmesan, a dash of red pepper flakes ( optional) and S and P. ( I always add the Salt last, if needed).. • one packet of McCormick thick and zesty Spaghetti sauce seasoning. • fresh chopped Italian Parsley.

I agree on the seasoning. Salt and pepper are all that you need most of the time, especially on meat. I’ve got breakfast biscuits in the oven as I’m watching your video. I made a peach/blueberry biscuit and some cinnamon roll biscuits. Got the icing ready to go on them while they’re warm. I’m making salmon patties for supper today. It's hot and humid, here in the Smokies. Easy Marinara: 1 28 oz can Crushed Tomatoes (san Marzano) 3-4 cloves garlic (jar is fine if in a hurry) 1.5 tbls Italian seasoning 1/2 tbls parsley 1/2 tbls basil (jar or tube) 1 tbls sugar 1/4 Pecorino Romano cheese (powdered is fine) Combine all ingredients in a sauce pot and bring to a simmer. Let simmer at least 20 min for flavors to incorporate. Recipe can be doubled

I am so happy I found your channel. You're inspiring me to cook more homemade meals, and I cut the ribs out of my romaine too but always put a granny smith apple in my salads. I have some chicken breast cutlets in the refrigerator, jarred sauce in the pantry and a block of parmesan...wonder what I should make for dinner?

Chicken parm is me of my favorites. I loved how you added oranges to the salad. The weather is nice here in east Texas today. Was able to get all my plums picked before it got too hot today. I love watching you. You inspire me.
Karen,I also have those PW cookware pans and fell in love with them at first sight.My kitchen has a lot of blue,so they were a must.Loved this vid of yours easy to make and the salad was gorgeous! You mentioned an easy really good sauce recipe. I like the sauce and grated parmesan packets included in the Green boxes of Kraft Delights Spaghetti Dinners.You just need 1 can of tomatoe sauce,but I usually add couple sprinkles of dried onion flakes,few shakes of garlic salt,pepper to taste,and a little dried or fresh minced Italian parsley,added with about 3/4 water I measure in the tomatoe sauce can. Stir all together and bring to a slow boil,then add 2 tablespoons butter and stir. Once you make it once you will enjoy making it for easy quick dinners in various ways. Even though the Kraft box is very economical for these days and times,the taste of this sauce is really great.Hope you give it a try. PS, you and your hubby are love birds like us.🥰❤🙏

Also, you could make a pizza with the italian sweet bread, the way it's cut. I love the idea of cutting the chicken breasts in half too. You're generous with the cheese like most of us. It's hot and humid, here in the Smokies.
Easy Marinara:
1 28 oz can Crushed Tomatoes (san Marzano)
3-4 cloves garlic (jar is fine if in a hurry)
1.5 tbls Italian seasoning
1/2 tbls parsley
1/2 tbls basil (jar or tube)
1 tbls sugar
1/4 Pecorino Romano cheese (powdered is fine)
Combine all ingredients in a sauce pot and bring to a simmer. Let simmer at least 20 min for flavors to incorporate.
Recipe can be doubled

To make a good sauce takes time. Bottled sauce is just fine and you can add things like you did to make it your own. Good recipe!

Karen,I also have those PW cookware pans and fell in love with them at first sight.My kitchen has a lot of blue,so they were a must.Loved this vid of yours easy to make and the salad was gorgeous! You mentioned an easy really good sauce recipe. I like the sauce and grated parmesan packets included in the Green boxes of Kraft Delights Spaghetti Dinners.You just need 1 can of tomatoe sauce,but I usually add couple sprinkles of dried onion flakes,few shakes of garlic salt,pepper to taste,and a little dried or fresh minced Italian parsley,added with about 3/4 water I measure in the tomatoe sauce can. Stir all together and bring to a slow boil,then add 2 tablespoons butter and stir. Once you make it once you will enjoy making it for easy quick dinners in various ways. Even though the Kraft box is very economical for these days and times,the taste of this sauce is really great.Hope you give it a try. PS, you and your hubby are love birds like us.🥰❤🙏
