Hi Shirley. I use about 5 1/2 ounces Or a half of an 11 oz bag of Ghirardelli white chocolate in one batch of Italian Meringue BC, which makes about 4 cups of frosting.

I used fondant mixed with tylose and it didn't take long to firm up. It kept it's shape. You can stuff it with material or cotton balls to hold it until it dries if needed. But I didn't need to do that with these.
