I am going to pull it at 45 days and have been planning on making a dry aged philly cheesesteak with some of the meat after steaking out the subprimal. @@jthemegaviru8681 Bell peppers are nontraditional. You don't get peppers on real philly steaks. I love peppers, they just aren't authentic. Take that how you want.
It's not just that. I feel like over the years, Pat'ss and Geno's have both declined taste wise and don't fill up their cheesesteaks as much anymore. The only pro is that they're open 24/7. If you want a solid cheesesteak similar to Pat's or Geno's that tastes better, go to Jim's or Tony Luke's. My personal preference would be Dalessandro's and Woodrow's.
It doesn't mean they eat meat every single time. Maybe Angel doing a fitness or maybe he only eats meat when Guga not making a content or maybe his metabolism is really fast.

I was in Philly about 9 years ago. I learned after my trip to Genos and Pats, that they are tourist trap material. You want the good stuff, find the mom and pop places on the edges of downtown.
Have lived in Philly for 40 years. Been to pat's and Geno's both once. Total tourist trap. Simply awful. Go to local steak/pizza places. Must be a thousand of them, all better.
@@jamesp13152 like i said, the mom and pop places selling them. My best experiences were on the outer edges of the downtown area. I was there two weeks, i think i ate like 30 cheesesteaks my whole trip. I think I only repeated places like 3 times too.
This is exactly how people think of New York too, they think the food is in the City when its really Upstate and Western NY where all the real food is.

Cooking at home is way better then most restaurants. Not to mention mastering something and feeding friends. Took me a long time but I mastered Detroit style pizza then put a taco twist on it. Freaking amazing. Just start cooking meat!
I first watched this when it came out. Im a meat lover for life but i felt he went way over board making this one. Now i watch it now i am excited. I spent months years with guga and iv grown to understand that the best parts of life are try news amazing foods. Use all your five senses through life and you wll never regret. The best way i know how. Food, it works with Taste, sight, smell, touch through the tongue(temperature and texture) and sound through a salt block, a granite block sizzling on you table while you essentially cook your steak yourself on your plate so you can cook the steak the way you want it. And now i want to make food in ways i never imagined. Coming home to cook gives me joy and purpose.

I'm a Philly boy with six cheesecake shops and I am a huge follower of your channel but I'm also a blue collar Philly boy and that means that I eat at Pat's because Gino's is for the tourists pets is for the blue collar workers in Philadelphia, but I've been following your channel for years when I think that you have something special to offer all of us and I love that you made a video about Philadelphia's favorite sandwich!
Years ago I was in Philly and took my wife and son to Pats, and Genos. Talk about out of the way. They are tucked away in a five way intersection of a rebounding neighborhood. Both sandwiches were great, and the people were wonderful to hand out with. I had several phillys at the station and they were awesome as well. Our week long taste test concluded that while all were a little different, they were all delicious. My advice is if you are in Philly, give up on the contest and try a few places and enjoy what you get!
Provolone is the true Philly cheesesteak. Whiz was a New Jersey import that has been pushed on tourists. Even Geno’s, one of the tourist traps, will recommend prov over the neon goo. A true Philly steak has provolone on it, preferably sharp.

They dont use French bread on Philly cheesesteaks. They use Italian rolls from Di'Abrosio' or Amorosso delivered fresh every morning. Its well know in Philly that Italians make the best bread period!!!

Bleep Bloop Nah with bacon it’ll be too rich and smoking wagyu isn’t a goo idea. Wagyu and truffle will probably be perfect. Plus smoking thin slices creates beef jerky. Idk about garlic bread. Too many rich ingredients doesn’t have a good outcome (from my experience)

Not only as a Philadelphian but a Philadelphian who works at a well known Cheesesteak establishment here in Philly I will say this was pretty spot-on with the exception of the roll. you can't really replicate a Philadelphia Liscio or Amoroso roll so the brioche roll came pretty close, overall it looks good, good job!
PhillyReese215 the steak was way too finely chopped, onions not carmelized enough, issues with the roll aside. Saying this was an improvement was borderline offensive imo

I love how you made 2 versions. It allows for the "Cheese Whiz" version without compromising the more culinary approach of real cheese. The beauty of this method is you get to compare the different methods at the end and make your own mind up. Frankly, I know that processed cheese is great when melted so would love to contrast and compare. I'll have to try this

58 years living 20 miles south of Philadelphia and Tony Luke's is by far the best all around Cheese Steak. Took my Fiance' from California on a Cheese Steak Tour and she picked Tony Luke's..
Of course your videos and food is ALWAYS incredible. The next time you make a Philly Cheesesteak, cook the ribeye SLOW, not 'super-high' like you did here. You do not want too much of a crust on the meat. It changes the texture and flavor.

Of course your videos and food is ALWAYS incredible. The next time you make a Philly Cheesesteak, cook the ribeye SLOW, not 'super-high' like you did here. You do not want too much of a crust on the meat. It changes the texture and flavor.

Ribeye caps are the best for this, in addition use mushrooms and bell peppers for a "Philly Bomb"
I hate that Costco has started selling Ribeye cap pinwheels with the connective tissue still attached. A very chewy mouthful.

Usually ppl outside of philly butcher a cheesesteak. Props, that’s a good looking cheesesteak (minus the whiz). The bar I cooked at won awards for best cheesesteak..Good job!
