- Pear and Chocolate Chip Muffins
Ingredients for 12 muffins:
pears (Asian pears are used in this video) - 2 cups
lemon juice - 1/2 lemon (medium)
eggs - 2
brown sugar - 1/2 cup
vegetable oil - 1/4 cup
salt - 1/2 tsp
vanilla extract - 1 tsp
Greek yogurt (plain, 3.5% fat) - 5.3 oz (150 g)
all-purpose flour - 1 2/3 cup
baking powder - 1 tsp
baking soda - 1 tsp
semisweet chocolate chips - 4 oz (114 g)
Steps:
1. Peel and chop pears.
2. Add juice of 1/2 lemon to the chopped pears.
3. Take two eggs and 1/2 cup of brown sugar. Whisk it.
4. Add 1/4 cup of vegetable oil to the mixture and whisk it.
5. Take 1/2 teaspoon of salt, one teaspoon of vanilla extract, and 5.3 oz (150 g) of Greek yogurt (plain, 3.5% fat). Add it to the mixture and whisk it.
6. Take 1 2/3 cup of all-purpose flour, one teaspoon of baking powder and baking soda. Sift it.
7. Combine two mixtures (dry and liquid).
8. Add the chopped pears to the mixture. Combine it.
9. Add 4 oz (114 g) of semisweet chocolate chips to the muffin mixture. Mix it.
10. Fill muffin liners with the batter. Approximately 2 tbsp each.
11. Preheat the oven to 350°F (180°C). Bake for 25 minutes.
12. Let the muffins cool for 10 minutes. Enjoy!
