Since you are in a 10 Deg F temperature environment I honestly don't know if you will be able to see a more transparent gas or not because you could just be seeing water vapor just like you see with your breath in cold air. I'm going to run an idea by you that I know has already crossed your mind. Since it is very cold have you thought of subbing the oil scrubber oil with a mixture of antifreeze and water? It should still give you a scrubber effect. I have not made a video yet but right before it got cold here I built a single tube scrubber for my gasifier that used steel wool too.
I am actually using the engine vacuum to bubble a tube that is 1-1/2 inches deep in a 1/2 gallon water reservoir. I have a 1 inch space above the reservoir where I have about 2 feet of stainless steel wool and what I am getting is a lot of fine bubbling
action rising up thru the stainless steel wool with an acceptable enough back resistance to allow a small 5 Hp Brigs and Stratton engine run without bogging down. I am still tinkering with it but it is showing some good results. I really like the job you done on this gasifier. The workmanship is top shelf.

I like the idea of a wet scrubber. Just one question: why oil? water is cheaper and easier to work with, if your worried about it freezing add some antifreeze . check for tar with a white cloth over the end of your flare pipe

Moisture from the wood (wood vinegar) condenses on the wall of the hopper. On the inside of the hopper there is a gutter and the tubes connect to the gutter. At the lowest point, there is a collection tank for the liquid. Some of the liquid is watery and some of it is like tar.
