      Thanks Uncle Steve!!! The tallow really gives the brisket a ton more flavor, but I honestly would use regular beef tallow next time. Although the Wagyu tallow tasted excellent, it was very rich, so I couldn't eat as much brisket as I wanted at one sitting. LOL And I LOVE all of your Shakes my friend!!! Keep putting out those excellent products and I'll keep using them. Cheers my friend!

    Pro tip, smoke the tallow while you're smoking the brisket. It does make a big difference.
    I always save some of the smoked tallow to use for cooking on the stove.

    Another great cook as usual. I've tried the beef tallow on my last 2 briskets and I agree it does make the beef more tender and juicier. It also seems to reheat better as well as far as staying tender longer. Great job T-Roy!

      Hey Joe, I appreciate you stopping by my friend. The tallow does add a ton of flavor to the brisket, but I think I'd honestly prefer regular beef tallow instead of the Wagyu. The Wagyu was too rich tasting IMO, but man it was good!

      I'm sure you'll love the beef tallow brisket. It was delicious, but it was slightly rich because of the wagyu tallow. I'm thinking of doing this again using regular beef tallow so it isn't too rich tasting. Still yummy though!!! Keep that smoke rolling brother!!! Cheers!

    Guys you can render your own tallow from the fat you trim off of your brisket.
    Put it in a sauce pan on med low heat then reduce to lowest setting until liquified. Note, all fat wont render just strain off the tallow. Don’t burn it.
    It will also keep in the fridge just fine. Good luck and God bless

    This is why I separate the point and flat before wrapping. Sometimes they indeed cook like the two separate muscles they are and run at different times. Still looks good though.

    My dad passed away 9 years ago, I inherited his smoker. And it has just been sitting. It was something he was very proud of buying just before he passed (I believe a webber offset is what it is called?)
    Anyhow I bought a brisket that has been sitting in my deep freezer for several months. I have finally gotten brave enough and got it out and it is thawing in a cooler. I have been following you for a few years trying to get up the courage to try and smoke something, just reviewed a few of your old videos on fire management and how to use that darn charcoal chimney that I have yet to figure out (I also got his charcoal grill that I have failed to use bc I can't get charcoal to light), but I'm going to go for it this weekend. I don't have all the fancy thermometers and stuff you have, but your videos have given me the courage to try.
    There is only one video I'm looking for before I start and that is how to clean it. It has been sitting for 9 years and also when I got it just after my dad passed we found old hot dogs in it.... (assuming he had put them in there to stay warm for grandkids at the last cook out we had). It doesn't look dirty, actually looks new, but for peace of mind I would like to know how to clean it.... just a idea for a future video.
    Also I have seen people put foil pans under the grates to catch the drippings, what are your opinions on that?

      Hey Chellee, sounds like you have a promising cooker there!!! And it has memories of past cooks with the family which is awesome! Honestly, I'd just hose it out with a water hose to get the gunk out of it and fire it up to dry out the moisture. Then I'd reseason the inside and out with Pam spray or something similar and let it burn off. Then you'll be good to go with a fresh cook on it. Don't scrape all of that good seasoning from the inside of the pit. That actually adds flavor to the meat. And yes, the foil pans will help with clean up after the cook!!!!       Thank you. I got the brisket on early this morning. I'm about 4 hours in, had a few major temp fluctuations, and smoke problems, but I think I'm finally getting it. I definitely need to figure out temp control, and get the feel for when and how much wood to add.

      Forgot to say I'm having so much fun that I just realized I have 2 pork butts in the freezer I can try to smoke later this week.... It's a good thing I have 8 kids to feed.

      Yep, that was a tasty brisket for sure! The beef tallow really added a lot of flavor. I've probably done 7 or 8 cooks on that GrOven and I've created a playlist just for those cooks if you wanna see more of it. It's probably my favorite cooker to cook on nowadays, but I'll always love my WSM! LOL I put a link in the description for Pork Belly Wood Works who makes my cutting boards if you're interested. He does fantastic work and you can customize the wood choices for the board he makes you. Cheers!!!

    I have adopted a waste not want not habit. There isn't any need to buy tallow when you can just save the drippings and fat trimmings and make your own. I rendered my trimmings in the offset so they got smoked. You might want to do it in a container that is easy to clean like stainless. It is just as good as bacon grease.

    Jeremy Yoda started a tallow craze. MCDONALDS used to cook fries 🍟in tallow. They taste great them then.

      Yep, that is a Wilton sheet cake pan my mom gave to me probably 30 yrs ago.
