Pretty sure the compressive strength of food is a little lower than the constituents of normal concrete, calcium carbonate also doesn't meet the strength requirements for most concrete as far as I'm aware. But if you can compensate for the strength reduction from the bacteria, this may be a viable way to increase the durability of concrete from chloride ingress. Though it should also be stated that a number of admixtures already do this.
