Recipe and ingredients:
✅For the sponge cake:
6 egg whites.
A pinch of salt.
Beat until fluffy.
150 g sugar. Add gradually in small portions.
Beat until the sugar dissolves and soft peaks form.
6 egg yolks. Add one at a time, beating each time until smooth.
150g flour.
Stir from bottom to top to keep the eggs foamy.
✅Baking pan 37/26 cm.
Bake in a preheated oven at 200°C without fan on a medium setting for 12-15 minutes.
Cover with a towel and allow to cool completely.
Cut. Grind the rest into crumbs.
Cut into 4 equal parts.
✅Prepare the cream:
300 g whipped cream 33-36% (chilled).
130-150 g icing sugar.
Beat until soft peaks form.
400 g sour cream or Greek yoghurt.
Cream thickener - if necessary.
✅Filling:
Chopped peaches (2-3 pitted and peeled peaches)
✅Preparation:
120 ml milk.
1 tablespoon sweet condensed milk.
✅For the glaze:
50 g milk chocolate.
25 g whipped cream.
Melt in the microwave or steam. Stir until smooth.
80 g white chocolate.
30 g peach puree.
Melt in the microwave or steam bath.
If necessary, add 1 drop of yellow gel color for a stronger color.
Stir until the mixture is smooth.
