    I just found your channel and I LOVE how you explain why do do certain things - like adding the oil and butter. I've never tried cornbread dressing before and after seeing this I want to make it. You mentioned that you love the brown part on top. Do you think I could put make them in muffin tins - so I can freeze them and eat them at a later date and there will be more brown around the edges?

      Just cut your dressing in squares, the size you want for each meal. This is easier than cleaning muffin pan's.

    This dish looks really good, but I would want my final mixture to be a bit more coarse before baking it in the pan. How could I keep the cornbread in larger chunks?

      +nphowe Oh yeah, all you have to do use less liquid. Instead of using 8 cups of chicken stock, use about 6 cups and the dressing should be right where you want it.

Just finished making it SOOO MOIST AND FLAVORFUL THE BEST dressing I’ve ever made for Thanksgiving and even though I made it in one pan it only took about 1hr/and 20 min thank you so much for sharing.. oh and with that giblet gravy gurlll I might have to Slap myself!!!!

    I love your channel! I'm going to make my cornbread today so it'll be ready to use by Thanksgiving but I would like to know if I should just let my cooked cornbread sit out on my counter uncovered/covered until Thursday? Or in the fridge uncovered/covered? Thanks!

      After it's completely cool. I let it sit out for one day covered with saran wrap and I poke a hole in the saran so the air can get to it. You know air to bread will make a little stale. I put it in the fridge for the second day still covered.

    What can you use if you don't have your (diamond seasoning) instead?

      A low sodium cajun seasoning is as close as I can get you. Try to find one that has 150mg or less that way you can control the salt better in the entire dish.

      To make it less wet just use less liquid. On the recipe I recommended 6 cups instead of 8.

    Hi Carolyn! I love your recipes and will be trying this dressing this Thanksgiving. I have a quick question for you though, do you ever use cream of chicken inside your dressing? I'm asking because that's normally what we add in and i just want to know if you think it's unnecessary. Thank you!

      I’ve seen it done but I’ve never done it. If that’s a favorite ingredient you can adjust the recipe accordingly. Since there’s stock in the recipe you may need to swap the cream soup for the stock cup for cup. I wouldn’t do more than a couple of cups.

    Hello....I cannot find fresh sage. Can I use ground sage? Also, I don't have the time to order grand diamond seasonings. What is a substitute for the gd seasoning?

      Yes you can use dried sage but remember to use 1/2 the amount of the measurement. Dried herbs are more potent than fresh.

      CookingWithCarolyn would it be like a freezer to fridge or would it be better to let it come to room temp then cook? I know it sounds crazy but, I have never froze dressing but, I would love to have this on hand for other meals like chicken or smothered porkchops. thank you for replying. happy holidays!!

      Just take it from the freezer to the fridge a day or two in advance. Let it thaw under refrigeration. When you reheat it put it in a baking dish, whether it fully thawed or partially thawed, cover it, and reheat until its ready to eat. Done and done :)

    I always wondered does the COLOR of the dressing matter? Every woman I know that makes cornbread dressing, it's always a grey-green color, not the most appealing but it is soooo good. When I've made my cornbread dressing it was more brown yellow, kind of like yours, but never tasted as good and I wondered if I was missing a step or so.
