  • The Ultimate Beef Pasandey: A Traditional Delight with Full Marination Guide
    I've posted a video of my famous and authentic Beef Pasandey before, but this time, l've included the full marination process to help you capture the exact flavors.
    This dish is a traditional dish, and I highly recommend following the recipe step by step for the best results!
    Ingredients:
    1 kg beef (thinly sliced into flat pieces)
    1 cup yogurt
    1 cup papaya paste
    2 large onion (finely sliced)
    1/2 cup ghee or oil
    5-6 tablespoons ginger-garlic paste
    Whole spices as shown in the video 1 tablespoon coriander powder
    1 tablespoons garam masala powder
    1 tablespoon red chili powder
    1 tablespoon Kashmiri chili powder
    1 tsp turmeric powder
    Salt to taste
    1 tablespoon roasted/crushed cumin seeds
    1 tablespoon roasted/crushed coriander seeds
    Fresh coriander leaves, onion and ginger for garnish
    Instructions:
    Marinate the Beef with papaya paste ensuring each piece is well coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
    Heat ghee or oil in a heavy-bottomed pan over medium heat. Add the sliced onions and sauté until golden brown. Then add all the whole spices.
    Add the marinated beef along with the marinade to the pan. Cook on medium-high heat, stirring occasionally, until the beef is browned then add ginger garlic paste and all the spices mentioned above. Keep stirring till all the spices are well cooked. Add the yogurt cook it till oil separates.
    Reduce the heat to low, cover the pan, and let the beef cook until it is tender. This should take about 45 minutes to 1 hour. Stir occasionally and add a little water if necessary to prevent sticking.
    Once the beef is tender add roasted cumin and coriander seeds. These two ingredients should be added in the last stage of cooking. Mix well and cook for another 5-10 minutes. Coal smoke is an optional step in this recipe, but it truly recommended.
    Garnish with onion, ginger and fresh coriander leaves.
    Serve hot with naan, roti, or steamed rice.
