  • Take a behind the scenes look at the making of a Minonokuni knife. This centuries old method of knife making is still practiced in modern Japan, although the craftsmen who have mastered this intricate technique become fewer in number each year. The Minonokuni series knives are made exclusively for Knife Merchant using the most traditional methods in an attempt to preserve what may soon become a lost art.

    I went down to the shop in San Diego CA some time this past year and got to hold these knives in person..intimidating works of art. Made by two sets of hands...no line, no factory, ...each a masterpiece. I dont have the kind of money to buy one of these but I love that the store owner took his time to display and show me everything on display and even these that he had to bring out from the back. This will be my go to place for cutlery for years to come. I love my Miyabi kaizen.

      After getting used to the single or chisel grind I love the knife. Carbon steel is no issue if you simply take care of it. So sharp and easy to hone. Great lifetime knife!

    i need to know about the take series, are the kanji showing on the surface of the knife is hand chiseled?, and i need to know the hrc of the take series, thank you...

    I have three hand plane steels that were chipped out of old ww2 anchor chain. Neat process, but those guys must be nearly deaf.
