An Iowa Mom Makes Creamed Cabbage Soup

  • Getting ready for St. Patrick’s Day, An Iowa Mom decides to make her quick and easy Creamed Cabbage Soup. This easy recipe makes two big bowls for a delicious meal (or 4 small bowls as appetizers.)
    Soup - Creamed Cabbage

    Makes 2 large bowls
    Brown:
    1/2 cup onion chopped
    ¼ cup butter
    Add and cook until cabbage is softened:
    4 cups shredded cabbage
    ½ teaspoon pepper
    1 teaspoon salt
    Mix separately before adding to cabbage:
    ¼ cup flour
    3 cups almond milk
    Stir flour/milk mixture into cabbage and continue to heat until thickened. Then cook another 1 minute while stirring to remove starchy flavor of flour. Serve hot.
