    That's absolutely beautiful 😍 You didn't knead the bread. Was it because of the spelt flour? I make 100% whole grain sourdough, and I've noticed spelt, einkorn, and other ancient grains don't respond well to kneading. Should I just do one stretch and fold like you did in this video?

    Thank you for sharing. What is the difference using the grain mill and a classic nutri mill? I see you have a few grain mill is it for different flours?

    Wlasnie takiego przepisu szukalam jest bardzo malo przepisow na chleb z orkiszu :/ A orkisz to wstaniale ziarna ktore polecala sw.     Anyways, i have tried to bake a freestanding spelt sourdough bread with an ear for weeks now. I didnt knew its gluten is so bad and was wondering where i went wrong. All i saw it had 13gr. of protein. this video was very informative, thanks!

    The Egyptians used Spelt flour (according to history), because it was superior to it's cousin 'Wheat'. Apparently it is more nutritious....

    These days all we get is'Durum Wheat' in bread, pasta etc.
    My opinion: We could do soooo much better 😁

    Looks a lot like mine. I guess spelt bread with spelt starter just doesnt rise as much :)
