    This is the only recipe I can find for general Tso blackfish and I’m glad it is. I’ve cook it numerous times and we love it. You’d think I would have it down by now😂I better record in case it disappears one day. I love you guys. Blackfish season is amongst us.

    Hi Roger: Great video, once again! I made your General Tso's recipe this evening for dinner. I used squid, as the protein. Excellent. Served it with steamed rice, and some sauteed bok-choy. Your technique is a winner. Be Well. Ed

      Awesome! I'll be doing some squid fishing this year for sure!

    Oh dear god! You have the best catch and cooks, hands down. I have blackfish vacuumed sealed in the freezer...problem is I suck at cooking. I’ll give it a shot in a couple of days.

      haha good luck! Just be gentle when flipping/tossing the fish in the pan, that's where I see things going awry.

    You made it a thousand times better then I did. I definitely want to try it your way this year

      I'm sure you're exaggerating! With any dish, you'll need a few runs to really get all the different techniques down. I've never made general tso's per se, but I've made thousands of similar dishes with the same core techniques.
      Did you ever find dry suit/gear that fits??

    You are truly an Artista Chef. We really enjoy your videos. The narration and camera work are top shelf too (and of course a great fisherman). Have watched a lot of your videos and always find just a pinch of dry humor that makes us lol. Great composition.

    Great video as always. For the marinade can you recommend an alternative to the cooking wine?

      Thanks! There's really no substitute for alcohol, but you could just leave it out!

    Man I learn so many little cooking tips from your videos. I want to try this with both chicken and blackfish. What type of chicken meat is this usually cooked with? Thighs?

    • @CookingandFishing
      @CookingandFishing  6 років тому +1

      Definitely thigh/dark meat chicken, I would also go heavier on the corn starch in the marinade. Basically with chicken, you want a harder crust/batter bc you'd have to fry it longer...I would mix the egg/soy/etc, and use just enough to coat the chicken pieces. Then use maybe 1-2 Tbsp of corn starch. Then dust in flour. With fish I prefer a lighter coating of starch to match the more delicate meat, if that makes sense.

      Cooking and Fishing gotcha, thanks for the advice. I just screen shot your response so I can cook it this week. One day chicken, another day blackfish. Unfortunately it's frozen blackfish from the fall, but it will have to do. Appreciate the help, as always.
