❗️Attention, I recommend using ingredients in grams as this is a more accurate and correct recipe! * Cup = 200 ml
🍰Sponge cake:
4 egg whites
a pinch of salt
120 g (2/3 cups / 4 oz) sugar
Beat until stiff peaks form, about 7 minutes
4 egg yolks
30 ml (2 tbsp / 1 fl oz) vegetable oil
120 g (3/4 cup / 4.2 oz) flour
5g (1 tsp) baking powder
Baking pan 18 x 28 cm / 7X11 inches
Bake in a preheated oven at 160°C / 320°F for 35 minutes
🍦Cream:
400g ricotta
3 eggs
30 g (2 tbsp / 1 oz) sugar
30 g (2 heaped tbsp / 1 oz) cornstarch
1 tsp vanilla
🍒Cherry jam:
300g (10.5oz) cherries
50 g (3 tbsp / 1.5 oz) sugar
20 g (1 heaped tbsp) cornstarch
60 ml (3 tbsp / 2 fl oz) water
Heat and stir until thickened
💛Sprinkles:
60 g (1/2 stick) butter
60 g (4 tbsp / 2 oz) sugar
120 g (3/4 cup / 4 oz) flour
Assemble the cake like in the video

Bake at 160°C / 320°F for 50 minutes
Allow the cake to cool completely

Good morning Berlin, baking in the oblong tin is a lovely change. I do like the square slices, they cut well and lift out easily. This looks so delicious, the ricotta makes a nice change to the cream cheese and yogurt fillings, at the end of the day, I think a full fat cream cheese is still the best. I did a cheesecake made with yogurt, it was very delicious, yet, for myself I prefer the Philly block. Using the cherry and other fruits, makes the baking very interesting. You are a very tidy baker, no mess outside the bowls, at times I can use the full kitchen, my son walks in and turns around and out again. Once the baking is in the oven, clearing the kitchen is easy and once the dishes are in the drainer, all is back to normal. Do you like to bake sponge cakes as well?
